Four Seasons Maldives Welcomes Chef Hari Nayak

Chef Hari Nayak will return to Four Seasons Resort Maldives at Kuda Huraa from November 2 to 8 for a week-long residency at Baraabaru, bringing his distinctive interpretation of Indian cuisine back to the Maldives. At the resort’s award-winning Indian restaurant, recognised among CNN Travel’s Top 10 Maldives’ Finest Tables in 2022, Chef Nayak will reunite with Head Chef Kishan Singh. Together, they will present a menu that combines the depth of Indian culinary traditions with a contemporary approach and the fresh flavours of the region.

So incredibly happy to be back at one of my all-time favorite places! @jholbkk never misses. ✨❤️

Got to reunite with the dishes I’ve been missing the most ~ the masala bun, BFC chicken, and pani puri are just as elite as I remembered. 😋✨

We also leveled up and experienced the Tasting Menu this time. Honestly? Just WOW. Absolute perfection from start to finish. 💯✨

Jhol can mean a simple curry. In Mumbai slang, it means mischief. Both feel right for a place that pours passion fruit water into pani puri and puts truffle on anda ghotala.

To mark its first anniversary, Jhol unveils refreshed tasting, lunch, and à la carte menus designed for family-style sharing. The experience extends through a three-act progression: starting with spice-route cocktails at Chola, moving into Jhol for regional coastal plates, and concluding at Mintsha, an intimate social space for lingering conversations.

Growing up, my impression of Indian food was probably just curry and roti. After all, for many Taiwanese people, Indian cuisine isn’t something we grow up eating or are very familiar with.

But the first time I tried @jholbkk in Thailand, I was genuinely shocked — in the best way possible. What surprised me most was how completely it changed my perception of Indian food.

I realized that Indian cuisine could be incredibly delicate, layered, and diverse. Different regions, coastlines, ingredients, and spices can create completely different personalities on the plate. JHOL was actually the restaurant that made me fall in love with Indian food and start looking forward to every new menu they create.

Even now, I wouldn’t say I fully understand all the culture and stories behind Indian cuisine, but I can definitely feel how seriously they take their food.

For anyone who is especially concerned about cleanliness, hygiene, and ingredient handling, JHOL pays an incredible amount of attention to those details. From the restaurant environment and kitchen standards to the way every dish is prepared and presented, you can really feel their commitment to quality.

Being recognized by the Michelin Guide is also something that definitely doesn’t happen easily.

Bangkok is one of those cities where you can find incredible food from all over the world, and the competition is intense. Yet JHOL continues to stay true to its own identity, its ingredients, its flavors, and its interpretation of coastal Indian cuisine.

So for me, JHOL is more than just one of my favorite Indian restaurants in Bangkok. It’s also the place that completely changed the way I see Indian food.

Sometimes, you don’t fall in love with a cuisine because you already understand it. Sometimes, it’s because one restaurant is able to guide you, dish by dish, into a world you never really knew before.

我第一次在泰國吃到 JHOL 的時候，真的有被他們的料理「嚇到」。不是因為味道太重，而是因為它完全顛覆了我原本對印度料理的想像

原來印度料理可以這麼細膩、這麼有層次，也可以透過不同地區、不同海岸線的食材與香料，呈現出完全不一樣的個性。也是從那一次開始，我慢慢喜歡上 JHOL，甚至開始期待他們每一次推出的新菜單

尤其在曼谷這個幾乎可以吃到全世界料理、競爭又非常激烈的城市裡，JHOL 還是一直保留自己對風味、食材和印度沿海料理文化的堅持

所以對我來說，JHOL 不只是「一家我喜歡的印度餐廳」，更像是一個讓我重新認識印度料理的地方🇮🇳

If you’re like me and used to think all Indian food looked kind of similar, this place might completely change your mind.

When it comes to my favorite Indian restaurants in Bangkok, @jholbkk is definitely one of them.

What I love about Indian cuisine is that it’s so much more than just “a lot of spices.” Every region, and even every coastline, has its own completely different food culture.

And that’s exactly what makes JHOL special. They take coastal Indian cuisine and present it in a much more modern and refined way.

This time, I came to try their new menu. It starts with dishes like pepper crab, Indian sausage buns, and spiced egg dishes, followed by oysters, fried chicken, and buttery spiced crab. None of them feel like the heavy Indian food people often imagine.

Some of my favorites were the spiced lamb ribs, South Indian-style pork curry, and lobster curry served with Indian flatbread. The spices are definitely there, but the flavors are layered, balanced, and never too overwhelming.

You can either order à la carte or choose the tasting menu, which really feels like a little journey through the different coastal regions of India.

The tasting menu is THB 2,299++, with optional wine pairing or non-alcoholic pairing.

So if you’ve always felt a little distant from Indian food, or if you’ve only tried the more familiar North Indian dishes, I really recommend giving JHOL a try.

You might realize that Indian cuisine is actually much more delicate, diverse, and exciting than you ever expected.

這次來試他們的新菜單，前面會先吃到像是胡椒蟹、印度香腸小麵包、香料蛋料理，接著還有生蠔、炸雞、奶油香料炒蟹肉，每一道都不是大家平常想像中那種很厚重的印度菜

我自己很喜歡後面的香料烤羊肋排、南印度風味豬肉咖哩，還有龍蝦咖哩搭配印度薄餅。香料感很明顯，但層次很多，而且不會讓人覺得太膩

他們可以單點也可以選擇套餐
整套吃下來，慢慢走過印度不同沿海地區

這次 tasting menu 是 THB 2,299++，也可以另外搭配葡萄酒或無酒精 pairing

如果你平常對印度料理有一點距離感，或只吃過一般常見的北印度料理，我真的很推薦來 JHOL 試試看，因為你會發現，印度料理其實比想像中更細膩、更多變，也更值得慢慢探索
