It’s not just a bedhead. It’s a little piece of my new beginning. 🤎

One of the unexpected joys of rebuilding my life after divorce has been creating a home that is entirely mine.

Choosing pieces simply because I love them.

Not compromising. Not considering someone else’s taste. Just discovering what makes me happy.

And this beautiful olive velvet bedhead from @ProvincialHomeLiving is one of those pieces.

Paired with this gorgeous doona, so generously gifted to me by the beautiful Chyka, from her @harrisscarfe collection. 💙

It might seem like a small thing, but to me it represents something much bigger.

A home that reflects the woman I am today.

My taste. My choices. My next chapter.

And I have to say, it feels rather lovely. 🤍

Sometimes rebuilding your life starts with the simplest things.

Have you ever bought something for your home that felt like a fresh start?

It’s another beautiful day in Melbourne today and the perfect time to share my new bed range called Garden Dream…
I love flowers and to sleep under a doona cover like this is just so beautiful…
The reverse side is yellow and white gingham so there is lots of fun ways this can be styled…
I hope where ever you are the sun is shining and the flowers are out!

I made this salad mix yesterday, to add to my tray with some gem lettuce and carrot. I HALVED the recipe below. I think it made enough for 3-4 serves. (Mayjer had some after school and LOVED it!)

LOADED EGG SALAD
6 hard boiled eggs, (mashed)
2 stalks celery
1- 2 cheeks of capsicum *see notes
1/2 small red onion
2-3 sweet gherkin pickles
1 tsp Dijon mustard
1 tbsp mayo
1/2 cup @bullafamilydairy cottage cheese *see notes
Salt/pepper

Cook the eggs to hard boiled. Once cooked, place in cold water, with ice, and set aside. (Not necessary, but helps with peeling).
In a mixer, or chopper, fine dice/chop the celery, capsicum, red onion and pickles, (this could also be done by hand or grater), then set aside. I used my @smithandnoble chopper.
Remove eggs from water, peel and chop/mash, leaving some texture.
Add the eggs, Dijon mustard, mayo, cottage cheese, and salt and pepper to the celery, capsicum and pickles, mix gently, until combined and evenly coated.
Enjoy as is, or spoon into lettuce cups, cucumber logs (scoop out the seeds), capsicum boats, (cut off the cheeks and remove seeds), serve on crackers/sourdough/rice cakes or crisps.

NOTES:
A cheek of a capsicum is the ‘lobe’ you see on the outside, most have 3-4 ‘cheeks/lobes’,(remove the core and the seeds).
This salad will keep for up to 2-3 days in the fridge. *Ensure your container is airtight to prevent the eggs from absorbing other fridge odours.
If you don’t like cottage cheese texture, blend the cottage cheese until smooth, or use Greek yoghurt instead. Same with the veg, change to your liking, *with cucumber ensure it’s deseeded to avoid extra moisture.
You could add garlic powder, onion powder, dill, curry powder or paprika, for extra flavour.
You could also add some small bacon bits, or shredded chicken.
Because cottage cheese and celery release water overtime, stir your salad prior to consuming, to redistribute the moisture.
You could serve this cold in a cob bread, just like a regular cob bread dip. Add crackers and chunky veggie sticks on the side.

Wearing cream Camilla and Marc dress from Mutual Muse over navy pants from Harris Scarfe , Elk bag (gifted for Frocktober), Next gold ballet flats, Bailey Nelson sunnies (previously gifted), Swarovski necklace that reminds me of a friend who passed away recently - I bought it when I was with her.
