A little look back at Understory No. 3 ✨

Chef Nicky Firmin-Chavez of UMAMI F(r)IENDS took us through an Atlanta summer—one course at a time—with a menu rooted in memory, family, and the flavors of the season. Morganne Lee of Avant Partir paired each course with Italian wines from small, family-run producers, and we gathered around one long table for a pretty special night.

Just like the menu and pairings, the table itself changes with every Understory. Each dinner gets its own tablescape designed around the chef, the season, and the story we’re telling that night—making every gathering feel completely different from the one before it.
And now, we’re getting ready to do it all over again.

Understory No. 4 brings Chef Kyle Taylor to the table for a five-course dinner exploring an ingredient through different stages of its life—from fresh to preserved to fermented—paired with wines selected by Whitney Blue of Prime Wine & Spirits and Nico Raia of Banville Wine Merchants.

The menu + wine pairings are officially here 👀 Swipe through for a first look.

Pulling glutamates from tomato water and kombu. Cured melon, pickled shallot, and time. A moment from Volume 06.

Lightly cured honeydew sits in the calcified shells of oysters pulled from the shores of the Salish Sea in British Columbia. There’s no seafood. But we wanted to mimic the sweet minerality those particular oysters are famous for. So we steeped clarified tomato water with kelp to anchor the melon and pickled shallot—a classic pairing with oysters.

Stay tuned for the next Volume announcement.

Understory No. 4 is Monday, September 21.

We’re welcoming Chef Kyle Taylor of @hecooksco for a five-course dinner inspired by the lifecycle of an ingredient.

Tomato, dairy, brassica, grape, and fig each get their own course, showing up fresh, preserved, cultured, or fermented along the way. Each course will be paired with wines selected and presented by Whitney Blue of Prime Wine & Spirits and Nico Raia of Banville Wine Merchants.

We’ll start the night with a welcome cocktail at Burle’s and a little time to wander downstairs at The Victorian before sitting down for dinner.

One night. One menu. One pairing. One table.

Tickets are very limited and available now at the link in bio.

Last night in Atlanta, we built a direct bridge to the British Columbia coastline.

The entire genesis of Volume 06 came from the tides. Things the ocean shapes, leaves behind, and washes ashore found their way into the room, literally and figuratively.

Those Denman Island oyster shells weren’t just plating vessels. Beyond holding the cured honeydew melon, we steeped and infused heavy cream directly with the calcified shells so you were tasting the true mineral salinity of the coast.

Along the wood tables, dozens of raw coastal prints I took along the BC shoreline (from Squamish to the Sunshine Coast, Comox Valley, and Tofino) created the visual tide line under candlelight.

Six courses. A little surprise pour. A takeaway treat. 12 guests locked into the exact same wavelength.

Grateful for everyone who joined us for Volume 06.

🍅 VOLUME 5: NIGHTSHADES 🍅
Looking for a different kind of dining experience? ✨

I recently experienced @serviceatseven Volume 5: Nightshades, an intimate six-course communal tasting by self-taught chef Kyle Tyler @hecooksco, where every dish celebrated the flavors of summer—tomatoes, peppers, eggplants, tomatillos, and potatoes. Every course was thoughtfully curated, but my favorites were the blistered tomatillo and the heirloom tomato tartare.

What makes Service @ Seven so unique is that every volume features a new theme and takes place in a different location, making each dinner a one-of-a-kind experience. This one was hosted inside a private home with 16 guests, creating a warm, welcoming atmosphere that felt more like a dinner party than a restaurant. It was such a fun way to meet new people, share stories, and enjoy a delicious meal together.

Next up is Volume 6: High Tide, inspired by coastal brine, tidal ingredients, and crisp ocean flavors. Tickets are live now (link in their bio), and if this sounds like your kind of dining experience, I’d grab yours before they sell out!

👨🏻‍🍳 HE COOKS POP-UP 👨🏻‍🍳

Did you miss the @hecooksco pop-up @hotelclermont? I had the chance to experience Chef Kyle Taylor’s creative menu while taking in one of the best rooftop views in Atlanta! My favorites included the Foraged Fig and Vidalia Onion Grilled Cheese and the Charred Corn & Chorizo Esquites.

The Hotel Clermont pop-up may be over, but you can still experience Chef Kyle’s cooking at his ongoing dinner series @serviceatseven. Be sure to follow @hecooksco to find out where he’ll be popping up next!

Service Has Concluded // Volume 05: The Nightshades.

What started as a simple, frustrating surplus of fresh eggplant morphed into an eight-course blind tasting menu exploring the depth of the entire nightshade family. From blistered tomatillos and heirloom tomato tartare to Berkshire pork tenderloin with Thai eggplant relish, this service was all about turning routine market produce into something distinct.

A massive thank you to everyone who pulled up a seat, shared a glass, and made the room what it was. These nights don't happen without the energy you bring.

A good dinner party doesn't end at the door. Each guest took home a loaf of roasted banana and locally foraged fig bread for the morning after.

🔥 WHO COOKS? HE COOKS 🔥
Atlanta foodies, here’s a chef to keep on your radar. ✨

I recently checked out self-taught chef Kyle Taylor’s @hecooksco rooftop series at @hotelclermont Rooftop — a limited residency featuring his hyper-seasonal, ingredient-driven menu. Between the skyline views (some of the best in Atlanta) and the thoughtful dishes, it made for such a fun experience.

We tried every dish on the menu, and my favorite was the charred corn & chorizo esquites. 🌽

While the rooftop series has wrapped, Kyle also hosts @serviceatseven, an intimate communal dining experience featuring a blind tasting menu. His next dinner is July 25 — reserve your spot if you want to experience his unique chef-driven dining concept. It’s definitely one I’d love to experience next. 👀

Would you add this chef experience to your Atlanta food bucket list?
