Tea, life, and other topics with our founder and tea sommelier, Catherine Hicks Cosgrove. What does a tea sommelier actually do? What started as a creative outlet quickly became a fascination with the art and science of tea. From the influence of geography on how tea is grown to the cultural traditions and stories behind each cup, Catherine discovered a world that brought together her love of flavor, history, and anthropology. What began as a hobby eventually became something much bigger.

When Catherine tastes a tea, she pays attention to four things: aroma, color, body, and finish. Pour yourself a cup of 303 Turn Down Service and follow along. Aroma: Lavender arrives first, cool and aromatic, with honeyed chamomile rising through the middle and soft, sweet linden blossom at the base. Color: Pale violet blue from butterfly pea flower, deepening the longer it steeps. Body: Light and rounded. Chamomile fills the front, lavender cools the middle, and lemon balm settles cleanly beneath. Finish: Lavender lingers softly, with chamomile sweetness holding quietly through the close. The perfect caffeine-free wind-down, made for the other end of the day. The more attention you give it, the more it gives back.

When Catherine tastes a tea, she pays attention to four things: aroma, color, body, and finish. Pour yourself a cup of 201 Kindling and follow along. Aroma: Cracked cardamom rises first, followed by warming cinnamon bark and sweet clove, with malty Assam black tea grounding the blend. Color: Deep copper-red, with the rich, burnished tone of Assam black tea, deepened by the spices. Body: Full and brisk. Ginger and black pepper bring a gentle heat, while Assam malt and a hint of star anise round out the palate. Finish: Cinnamon and clove sweetness linger, followed by the slow warmth of ginger and black pepper. A rich, aromatic chai made for the season of staying in. The more attention you give it, the more it gives back.

Tea, life, and other topics with our founder and tea sommelier, Catherine Hicks Cosgrove. Most of what you taste is actually aroma. Our tongues can only detect a handful of basic tastes, but aroma opens up an entirely different world of flavor. For Catherine, understanding the relationship between taste and scent changed the way she approached tea blending. Because when it comes to tea, what you smell is just as important as what you taste.

When Catherine tastes a tea, she pays attention to four things: aroma, color, body, and finish. Pour yourself a cup of 302 Wake Up Call and follow along. Aroma: Sweet orange lifts first, bright and peel-forward, with jasmine opening behind it over the malt of the black tea. Color: Deep amber copper-clear, full, and the darkest pour among the blends. Body: Full and warming. Black tea malt leads, orange brightens the middle, and ginger builds a slow heat. Finish: Citrus gives way to ginger warmth, with the earthiness of ashwagandha settling in last and lingering. A bright, layered black tea made to live up to its name. The more attention you give it, the more it gives back.

Tea, life, and other topics with our founder and tea sommelier, Catherine Hicks Cosgrove. Tea is a fragrance product. Catherine approaches tea blending the way a nose approaches fragrance: aroma first. You smell before you taste, and like fragrance, a scent can transport you back to a particular place, person, or moment in time. It’s that emotional connection that Catherine loves most about blending tea-and what sits at the heart of Forgrave.

Not your average tea bag. Forgrave tea sachets are officially here. Our new sachets are plant-based and nylon-free, with room for the tea inside to fully unfurl as it steeps-allowing its aroma, flavor, and character to develop in the cup. Because making tea more convenient shouldn’t mean compromising the tea itself. Our signature Forgrave blends. Same attention to the tea. A new way to take it. Available now at worldofforgrave.com

Tea, life, and other topics with our founder and tea sommelier, Catherine Hicks Cosgrove. Tea is like wine. Just like wine, tea can vary from harvest to harvest. No two cups will ever be exactly the same, but they’ll always come from the same family. It’s not manufactured to be identical. It’s grown and shaped by the bounty of the earth.
