I was introduced to #rainydaybitescookbookclub through the fabulous @hkydiva and finally took the cooking plunge when @chefwonder was featured with his phenomenal (yet intimidating to this Northern home cook) “Cook Real Hawai’i.” Made the cover recipe #mochikochicken and it was easily the best chicken we’ve ever eaten.

Funny thing was yesterday actually WAS a rare rainy day during this hot summer season! Perfect day to dive into this beautiful book that’s been tantalizing me for months.

While the chicken was all Hawaiian-Korean-Japanese delicious, we added a bit of Minnesota to the condiments and sides: maple sweetened the Kochujang aioli & Su-Miso, quick-pickled garden cucumbers replaced the salt-pickled cabbage, and garden zucchini sautéed with @rrcultivation mushrooms rounded out the flavors and textures. A chicken dinner winner, for sure!

Moroccan-Style Braised Chicken with Lemon (Tangia) from MILK STREET Tuesday Nights. Another winning recipe from this wonderful cookbook! It’s admittedly not the most photogenic of dishes, but trust me when I tell you how delicious it tastes. The stew is wonderfully flavored and the chicken is really meltingly good. The near-the-end of preparation to add 3 tablespoons of salted butter really pushed this to another level. My husband suggested that okra would be a good addition, which I’ve noted for the next time I make this, because there will clearly be a next time.

Do you ever justify owning a cookbook because of a single beloved recipe? Milk Street Tuesday Nights by @cpkimball has many recipes to love, but after making this one recipe, the Moroccan-Style Braised Chicken with Lemon, I needed no other justification to buy the book (I had it on loan from the library originally.) I LOVE this dish, have made it several times, and finally posting it since it’s one of the challenge recipes for the #rainydaybitescookbookclub this month. The spices are so well balanced—the cumin doesn't overpower, and the olives and lemon give nice depth and brightness to the dish. It has warm spices, is full flavored, and completely delicious.
