2011 I came to the united states from Caracas, Venezuela. After 2 years studying english I started culinary school. On my 3rd semester I got my first job as a prep-cook, in the back of the kitchen, peeling tomatoes all day. My chef at the time was always yelling at me because i was clumsy, slow and disorganized. I didn’t like to be yelled at... who does? So i realized the less messy, clumsy and disorganized i was, the less yelling i got... easy... just work more carefully, faster and organized... after 2 years in that restaurant I knew all the stations and I was already a Sous Chef doing all the ordering. Time for me to go somewhere else... somewhere where I can become better... I aimed for new york city. I got hired the day of my stage at @mareanyc I was nervous... coming from a city were there was not a lot of cooking culture, and there everyone had his own tools and everyone wanted to be better than the guy cooking next to him. In new york I learned to work with folded towels, to have a purpose for every spoon in my baine marie, I also learned that you can’t do everything with just 2 fairly sharp knives. So I started to invest... and to love my tools. every new utensil, spoon or knife was welcomed to my arsenal... I’ll use it to become the best in any restaurant I would work, from that moment to the day im too old to hold a knife in my hand or too slow to dance on the line. After NYC, I spent a summer in nantucket island, cooking of course! Not on vacations... I came back to miami ready to crush... ready to show the city everything I absorbed from all those inspired cooks and chefs, hungry for knowledge and glory... It was hard for me to stay long in a place were I was not appreciated. I worked in like 5 different restaurants in 3 years... We cooks like to feel that the chef is looking at you over his shoulder and when he finally calls you after service to buy you a beer and tells you “good job today bub...keep pushing”. It really makes you hungry for more #satisfaction and that fills you with more #motivation. After 6 months here at @stubborn_seed @chefjeremyford made me his sous chef... that was a year ago. Thats the story of how I got in love of my tools.

So proud of @eppsandflows and his team for working so hard getting this restaurant open. Still a few weeks out but today’s From Harlem to Overtown sneak peek brunch was the perfect end to @sobewffest and beginning of this next chapter.
