But if I’m making dhal, I MUST have poi bhaji in my dhal. 😍
Poi, also known as Malabar spinach, is one of those traditional greens that brings both flavor and nutrition to the pot. 🌿

It provides fiber plus nutrients like iron, calcium, magnesium and potassium along with carotenoids and other antioxidant plant compounds.

Dhal + rice + bhaji = my kind of comfort food. 🇬🇾❤️

Let’s make some pine tart really quick! 🍍✨

Fresh pineapple filling, a homemade flaky crust and in just a few hours, these golden little beauties were ready. 🇬🇾❤️

Nothing like homemade Guyanese pine tart fresh out of the oven!

🍍 Quick Pine Tart Recipe
Pineapple filling

• 1 fresh pineapple, peeled and finely grated/blended
• ½–¾ cup brown or Demerara sugar
• ½ tsp cinnamon
• ¼ tsp nutmeg
• 1 tsp vanilla
Cook everything over medium heat until the liquid reduces and the pineapple becomes thick and jammy. Let it cool completely.

Flaky pastry
• 2 cups all-purpose flour
• ½ tsp salt
• 1 tbsp sugar
• ¾ cup cold butter, cubed
• About ½ cup ice-cold water, added gradually

Mix flour, salt and sugar. Cut in the cold butter, leaving some small pieces for a flaky crust. Add cold water a little at a time until the dough just comes together. Chill for about 30 minutes.

Roll out into circles, add pineapple filling and fold three sides inward to make the traditional triangle shape.

Bake: 375°F for about 20–25 minutes, or until beautifully golden and flaky. 🍍🇬🇾

🌸 Happy Phagwah / Holi! 🌸

The morning started with a little powder and color to kick off the celebration 🎨 and now I’m picking up the kids so the real fun can begin when they get home.

Of course, we’re also making gulgula (fried banana fritters) — one of my favorite Holi traditions. There’s nothing like the smell of them frying in the kitchen while everyone gets ready to celebrate. 🍌✨
