Some turn to prayer, some turn to despair. Each of us has our own ways of dealing with bad times. But how does one cope with disaster on this mammoth scale? So much suffering, the loss of so many precious lives. How does one process it all? For me, one way is to be thankful for the few things in life that I can still have some control over. And to lose myself in my kitchen or in playing games online. To feel gratitude when I receive a bagful of wholesome goodness (like these fresh, hydroponic greens from @satvikifarms) that I can put to use, even when the world as we know it is turning upside down. I spent several hours putting together this meal. Here's how... First, I used their spinach and fresh aromatic thyme in a chilled soup (sautéed chopped garlic, onion and apple in butter and added salt, powdered cinnamon, nutmeg and black pepper). I blitzed all this in the mixer with milk and poured into glasses to chill. I popped 10 grapes into each glass, which made the complex flavours of the gazpacho even more interesting. I dressed their superb kale and arugula very simply — a drizzle of honey, a splash of extra virgin olive oil and a dash of aged balsamic vinegar. I put in bits of sweet Nagercott oranges and crumbled in some peanut & jaggery chikki for crunch. Some salt and pepper and it was ready to chill and eat. The juicy cherry tomatoes and basil (Italian and purple varieties) went into an aglio olio fusilli pasta, made with EVOO, garlic, paprika, plus black olives and a little cheese ('cos it can't be comfort food for me without cheese!). For dessert, it had to be just simple Alphonso mangoes. Chilled, of course. We had this with a lovely blushing rosé from @chandonindia that I had been saving for a special occasion. But what can be more special than having our health and our life in times like these? #dinner #mycooking #myescape #mykitchen #pandemiclife #greens #hydroponic #hyperlocal #localbusiness #smallbusiness #gazpacho #salad #pasta #chilled
