Whipped Feta & Watermelon Crostini 🍉

You need to make this next time you have people coming over!! It’s super easy, fresh and summery 🌞Everyone will go bonkers xx

Ingredients:

Crostini
- 1 baguette, thinly sliced
- Olive oil & salt

Whipped feta
- 200g feta
- 1 tbsp olive oil
- Splash of water
- Pinch of salt

Watermelon topping
- 2 cups watermelon, finely diced
- 1 tsp olive oil
- 1 tbsp @its.olio balsamic glaze
- 1 tsp honey
- Pinch of salt
- Fresh mint, finely chopped

To finish
- Extra fresh mint
- Sesame seeds

Method
1. Slice baguette, drizzle with olive oil, season with salt and bake at 180°C until golden and crisp.
2. Blend feta, olive oil, water and salt until smooth and creamy.
3. Toss watermelon with olive oil, balsamic glaze, honey, salt and chopped mint.
4. Spread whipped feta over each crostini and top with the watermelon mixture.
5. Finish with extra mint and sesame seeds. Enjoy!

Hands up if you thought you were a lifetime member too 😂 Save to make this ridiculously delicious (and garlic loaded) white sauce spinach pizza!

1 dough ball, store-bought or homemade pizza base
White garlic sauce base
2 tbsp dairy-free butter
2 tbsp plain flour
1 clove garlic diced / minced
1.5 cups dairy-free milk (I used soy)
1 cup cheese shreds (I used made with plants)
1 tbsp garlic powder
1 tbsp mixed herbs
Salt & pepper
2 tbsp nutritional yeast
Frozen spinach, defrosted and drained
Dairy-free feta (such as bio or YAY feta)

Preheat the oven to 180 degrees - prepare your dough ball earlier so it’s ready to roll out, or if using a store bought base, have it ready.
Melt butter in a pain on medium heat. Add flour and whisk to cook the flour down as you would for a bechamel.
Add garlic and cook for a minute, stirring often. Add plant milk of choice (unsweetened), garlic powder, mixed herbs, and cheese shreds and turn the heat down – keep whisking until most of the cheese shreds are melted and season with salt and pepper. Taste it along the way so you’re happy with the balance and especially if you add extra plant milk (if your sauce is too thick or you want it to go further).
Prepare your base and ladle the garlic sauce on the base as thick as you like (but save some to top the pizza with). Sprinkle spinach over the top and finish with more garlic sauce.
Cook in the oven according to your base instructions and when the garlic sauce looks golden and a little crispy at the edges. Remove the pizza and top with dairy-free feta of choice, sprinkle with chilli oil, chilli and garlic flakes, and fresh lemon zest and devour.

Easy Meatball Salad 🥗 Lunch recipe: prep time is 5-10 mins, results are delicious. This is a nice Spring/Summer salad that keeps everyone happy after a beach morning or quick home lunch after work.

Ingredients needed are: Salad pack (1), meatballs (4-8 each), @beerenbergfarm caramelised onion relish, @meredithdairy Dill goats cheese, cucumber (1), lemon 🍋 (1), brown onion (1), @its.olio olive oil, black pepper.
