This past April I was able to collaborate on Tender, a staged dining concept by artist Aaron T Stephan and hospitality expert Gabriela Acero. The goal was to draw on feelings of nostalgia through food and the different spaces they are enjoyed. From a solo snack at a bar while reading, late night food trucks, to loud family dinners.

I can’t begin to express how challenging but satisfying this dinner was and how grateful I am to have been a part of this collaboration. Thank you to my teammates, family, friends, sponsors and all who were able to attend. This was certainly something special.

A heartfelt congratulations to our dear friends at @lacarneriaspina on the opening of their stunning new space in our nearby village of Spina.

This is more than a butcher shop. It’s a place to sit for a glass of wine, taste the best of what this land has to offer, and feel part of something local, real, and deeply rooted.

Over the past four years, @lacarneriaspina has been part of almost everything we’ve created at Poggio Belvedere. From the long summer nights with @secret_supper, to candlelit castle dinners, from feeding the crew of @befree_fashion during their campaign shoot, to the countless family meals and memories shared by our guests — their work has been behind it all.

Any beautiful table we’ve set… any meal that made someone pause and say “I’ll never forget this”… was only possible because of collaborations like this one.

This new space marks a big step for our beloved small town of Spina, and for our guests, who now get to enjoy La Carneria’s cured meats and seasonal dishes right in town. It’s a win for this quiet little corner of Umbria — and a reminder of what’s possible when people invest in place.

Thank you to the entire La Carneria team for showing up with creativity, care, and incredible taste, every time.

We’re honoured to work alongside you — and even more honoured to call you friends.
