Personal taste memory is the heart of our menu, and the space where fresh perspectives are born. Here, wild-caught Japanese Ishidai is balanced with fresh pear, avocado, and jicama. We finish the dish with a delicate pear leche de tigre, brought together with culantro oil and Sichuan pepper oil, inspired by Chef @rchaneton’s recent travels to Chengdu.

個人味蕾記憶是我們菜單的核心，也是嶄新視野誕生的空間。這道菜式以野生日本石鯛為主角，巧妙搭配新鮮梨子、牛油果與豆薯，展現清爽平衡的風味。最後加上一抹精緻的 Leche de tigre ，並融合刺芫荽油與四川花椒油，靈感源自主廚 @rchaneton 近期的成都之旅。

今年六月開張嘅 @ninetta.hk 應該係近呢幾個月
中環最火熱嘅意大利小餐館，晚上經常爆滿
呢間餐廳主打意大利家庭式菜式，由前Testina 主廚 @chefxodo仲有Estro主廚@antimo_maria_merone 同@grazdegreg 齊齊攜手打造嘅餐廳，就連餐廳名都係非常有意思，意大利文嘅意思就係代表着小Nina , 即係嗰個永遠喺屋企打開道門等你返屋企食飯嘅婆婆，

個人推薦必試嘅一定係佢哋嘅手工意粉，Boston lobster paccheri 粗管意粉掛滿龍蝦汁，醬汁味道非常濃郁，全枱人都一致認為好食！另外前菜非常推薦 Veal Tongue Bun 首先用薄切牛舌嚟做包已經好少有，而且薄切完嘅牛舌肉質幼嫩！另外一個Mozzarella Braid，辮子形狀的mozzarella 係來自坎帕尼亞，雖然睇落去好似平時食嘅芝士沙律咁，但係佢哋嘅食材非常講究，推薦大家一試，店員仲會親自上枱配搭俾大家！唔好以為剩係得意粉等等嘅主菜好食，就連甜品大家都非常滿意，個人推薦Panna cotta 同pistachio cake , 開心果味道濃郁，配搭濃郁嘅開心果sabayon 醬，開心果控記得要留肚試！

🔥 ESTRO x CRONY 🔥

A fun night with magical dishes from chefs Antimo Merone and Michihiro Haruta — from aori squid with caviar to Hokkaido king crab and langoustine linguine with Amalfi lemon. One of Crony’s signatures saw a variant, swapping out the tuna and became Wagyu x Wasabi. The joint dish: roe deer with hazelnut bagna cauda, venison consommé and Japanese rice. ❤️❤️❤️

Amazing food. A collaboration par excellence.

Our Unplugged Series is back for its 18th Edition on November 7. This time, our very own Chef @rchaneton welcomes Chef @chef.je2901 and the @farmlore.in team all the way from Bengaluru.

Though miles apart, we share a devotion to sustainability, deep respect for ingredients and a strong connection to our culinary roots. Together, we pair techniques with intuition, transforming honest harvests into plates alive with unexpected surprises.
