A new cocktail renaissance is happening within these distressed walls. Surrounded by patches of exposes brick, antique shelving and a centuries-old-looking bar top that gives the illusion you're drinking in a post war bistro, a modern idea is blooming at @virginiacocktailbar. Rounded by time are some of the city's most experienced and highly trained bartenders who are on a mission to offer balanced and thoughtful, forward thinking cocktails, but at a price that brings Toronto's cocktail scene back to a time when the cocktail experience was affordable to the everyday barfly. All of the drinks on this menu ring in at between $13-$16 to contrast the casual $20+ offerings we've become used to seeing around town.

Bartenders Joel Savoie, Simon Taggart (@sour.simon) and João Machado (@jnmachado), who made their bones at some of the world's most reputable cocktail bars, focus on craftsmanship, celebrating flavour and spirit while minimizing highly advanced techniques to keep the intentionally minimalist menu down to earth and ready to consume.

Trial and error, trial and error .. some malfunctions , mistakes and victories . Good things take time…this garden and a more natural life really are proof of that

I am very proud of what has been accomplished so far and excited for what’s to come . My dream specially for @tocaraposa.cocktail has always been to focus only on wild plants and what we’re able to grow.

To grow your produce it takes time, patience and dedication - in the last 7 years time that I didn’t have for being so busy on the day to day operation and bar life .

If today I can dedicate myself to growing this amazing produce and thinking of creative solutions and ideas for all bars and businesses is because of my amazing team that is EVERYDAY on the field working their ass off . So this is not only a proud post but a very well deserved appreciation post 🩷

thank you so much guys for your daily effort - onwards and upwards We go 🫰🫰🫰
