🐟 SARDINES, SIRENS & STORIES FROM THE SEA! 🌊🇵🇹 A little Sunday adventure in Portimão with one of my oldest and closest friends visiting from Cornwall. And of course, food is never far from our minds! 😎 First stop… the old sardine canning factory, now the wonderful Museu de Portimão. 🐟🏭 A fascinating glimpse into the Algarve’s fishing heritage. Imagine beautiful handmade wooden boats returning to harbour after a long night at sea, loaded with sardines. Exhausted fishermen earning their living from the Atlantic, while almost wartime-sounding sirens called the women to the factories to process the catch. A whole community built around the sea and the humble sardine. ❤️ From fish sizzling over charcoal to salting, preserving and beautifully packed tins travelling the world. Amazing how one little fish has shaped so much local culture! Funny to think that those sardines lucky enough to escape the nets might head towards Cornwall, or vice versa! Two Atlantic coastlines with generations of fishing traditions and a shared love of seafood. And who knows? Some of those Portuguese tins might even find their way onto a supermarket shelf back in Cornwall! 🇵🇹➡️🇬🇧 For THE CEVICHE PROJECT, this is what gets the creative juices flowing. Fresh local ingredients, old traditions, clever preservation and inspiration for something new. Respect the past. Celebrate the fishermen and the women who kept the factories running. Keep the seafood interesting! 🐟🦐🍋 If you’re in Portimão, this museum is a must-visit. Introducing the Algarve Ceviche Project. My love of seafood began on the Cornish coast and developed more than 20 years ago while learning about fish with the likes of Rick Stein & many other great great chefs who I’ve met on the road of whom I owe alot to. Since then, my career has taken me through London, France, Thailand and many other countries—each place adding new flavours, techniques and ideas to the way I cook. After more than 12 years as a Private Chef in Portugal, this project along with a couple of others in the pipeline for 2027 seem to bring all those experiences together for me. The Algarve gives us truly exceptional seafood. We take the finest wild, sustainable and seasonal fish available and prepare it with South American ceviche traditions, bright citrus, chilli, herbs and the aromatic flavours of Thailand and Asia with the fresh Algarvian produce. One of my first memories are eating smoked fish with my grandad aged 3. The Algarve Ceviche Project is the latest addition to the ever-expanding Algarve Chef’s Table Group. I have always loved new projects and fresh challenges—and with hard work and the right people supporting me, it is finally possible to turn these dreams into reality. Fresh fish. Lime. Spice. This was Day 1 of the Elevated Mindset & Marketing retreat in Portugal. Some of us had met in person the previous couple days in London for the Evolution Xperience and others came directly to the retreat. Prior to this many of us had only knew of each other from Zoom meetings. Prior to going, people asked me what it was about and the only thing I could say was that it was a business retreat. The truth is I really had no idea what to expect. I was nervous for sure but felt this was something I needed to experience. This was the “right room” to be in and I was going to go with flow. As I said, many of us hadn’t met in person before so that’s where the evening started. Then we were treated to our first taste of @jonathan_cloake and his partner Sara’s wonderful suppers. @algarve_chefs_table is unbelievable should you ever have the opportunity to try. Then things got interesting. I had no issue speaking to someone 1 on 1 but standing up and speaking to a group of people was nothing short of terrifying. We each took turns standing up in front of everyone, picked a card from Azaria with a random question and then answered the question. These questions were not vanilla; they were personal and vulnerable. It was an incredible way to establish trust, a safe space and to realize we all have fears, insecurities and self doubt. We’re all human. The first evening ended with a sax playing DJ and dancing. @dark_knight1022 and myself handled security 😉. It was a great first evening!
