An end of a chapter as Kaori has closed its doors for good.

Being a young Head Chef has taught me a lot. Most importantly, the lessons that are learned from the people around you that come from different realms of life. A quite unique way of thinking what a kitchen team seems like; I pretty much view the kitchen team as a rugby team, everyone has a role and plays an important one. As we prep during the day it’s basically the build up and training for what is to come for service/game day. During the service, there will always be ups and downs and heats of the moment, very similar to rugby. However, at the end, what happened during the heat of the moment stayed on the field/service, we get together and share a drink or more and talk about our day or completely forget whatever happened. These kind of things rarely happen with other industries. It’s one of the reasons I ended up in this profession - what started as a hobby became a career.

The people are what make this industry so distinctive. Anthony Bourdain often spoke about kitchens as places that bring together people from different backgrounds, personalities, and life experiences and unite them through a common purpose. Few professions demand such trust, resilience, and camaraderie under pressure. You can spend service arguing, sweating, and pushing each other to the limit, then sit down together afterward as friends. The work is difficult, but the shared experience creates bonds that are hard to find elsewhere.

I can’t wait for the next chapter for everyone and this is only the beginning for many of us.

Much love Kaori,
