Full of gratitude that I get to start a new year on the cover of @austinwoman January issue!!

Founded in 2002 by @garvey.melinda with a mission to empower and inspire Austin women (does that mean I’ve peaked for 2022?!), I was ecstatic when editor Cy White and publisher @djweston21 reached out to me with the potential opportunity! I squealed with an excited “yes!”

Then, they informed me it would be for an issue focused on motherhood, and I got nervous and full of doubt. “Surely I’m not the Cover Mom for an issue on motherhood.” All my insecurities came crashing to the forefront. But I took a deep breath, acknowledged my hesitancy, and tried to graciously say “yes.” In the subsequent months, those doubts of imposter syndrome have crept in a lot - especially when it came to posing for the camera (not my strong suit!). And here we are today!

This was 100% a full team effort - the Austin Woman Magazine team was amazing!! And special shoutout to my personal cheerleaders who knew I’d be nervous and wanted to surround me with love and support during this day. Thank you to EVERYONE who made this such a dream, for boosting my confidence, and reassuring me every step of the way!! (Shoutouts below 💙).

Book #11: Layered by Tessa Huff [bought after borrowing from the library]

Recipe: Chocolate Coconut Cake p. 115

This cake is in honour of a very special day and person - Happy Birthday @kickpleat!! We were supposed to be in L.A. right now, sitting on a patio in the sun having a fancy drink and celebrating properly. A cake made in another city isn’t the same but thanks to the pandemic, it will have to do for now.
Tessa Huff is from Vancouver BC, like @kickpleat (and me!) and this cookbook is full of occasion-worthy cakes with multiple steps and pans and bowls. I chose this cake because of the many times she and I have shared a cone of coconut chocolate chip ice cream at La Casa Gelato in front of the pink wall.
This recipe begins with the slightly insane step: grease four 6” cake pans. Who has 4-6” cake pans? I’m lucky to have one. So I made the batter, greased the pan, baked the layer, cooled it, flipped it out - and did it again, 4 times. As you can see, my layers are not nice and even as a result but I don’t think she’ll mind. There is also a delicious coconut caramel sauce meant for the side but because I was so low on coconut chips, I decided it needed to be on top and between the layers as well. It’s delicious, my family is happy to have it but I sure wish I could deliver it in person.
