MEET HIRO SAN Born in Miyazaki in 1976, Hiro San grew up in Miyakonojo, one of the biggest Wagyu-producing towns in Japan, with relatives raising cattle all around him. He became a chef for a simple reason: to give the beef his family and friends were raising a place on the plate. He started in a French kitchen in an Osaka hotel, put in six years there, then turned fully to Wagyu. Today he runs the Kitan Group in Osaka, four concepts under one idea: beef from farmers he has chosen himself, each one aged differently depending on what that particular beef needs, and every cut handled by the chef himself. Yakiniku Kitan in Minamisemba is where it started. Kitan In near Hozenji is the omakase counter, with private yakiniku rooms upstairs, and it’s where this video was filmed, Hiro San portioning a Denver steak before it went onto the yakiniku grill. Kitan Hibiki in Namba is the dry aged steak house. The course at Kitan In has never once let us down, and the fascinating part is the originality in every single dish. Each visit brings something we’ve never seen before, and the quality never moves an inch. This visit we brought @gugafoods along, and the one and only walked out as impressed as we were. We’re already counting the days until the next one. Next time you’re in Osaka, any of the Kitan restaurants is a good night out. Book ahead. 📍 Kitan Group, Osaka 📷 @kitan_yakiniku / @kitan_hibiki 🏠 Minamisemba, Shinsaibashi (Hozenji), and Namba — ✉️ Save this post for your next trip to Japan! — 🌎 Follow @humansofwagyu, the biggest Wagyu community in the world 🌐 Visit our Online Stores in the 🇺🇸 and 🇪🇺 - Link in Bio — #wagyu #yakiniku #osakafood #omakase #humansofwagyu
