BIESIADA. The Polish Feast
hosted by @babki.club & @grape_and_grono

We celebrated Polish plant-based cuisine, giving traditional dishes our own seasonal interpretation. We cooked with fresh garden produce, wild mushrooms and herbs.

Summer Vegetable Platter 🌿

Green beans with buttery breadcrumbs and gochugaru, sautéed young carrots, green peas, a lightly pickled cucumber, grilled romaine lettuce, and plant-based cottage cheese made from sunflower seeds, tofu and garden herbs.

This dish is inspired by a traditional Polish summer lunch, with seasonal vegetables, buttery breadcrumbs and homemade pickles.

Savoy Cabbage Roll 🍽️

A Savoy cabbage leaf filled with pearl barley and freshly picked wild mushrooms, served in a rich mushroom broth.

Cabbage rolls with barley and mushrooms are part of the culinary tradition of Żuławy, brought there by settlers from central and south-eastern Poland after the Second World War.

Potato and Leek Pierogi 🥟

Delicate pierogi filled with potatoes and leeks, served with leek oil, young peas and broad beans, lemon panko, and herbs from the garden.

Pierogi with potato filling are a classic of Polish home cooking, with each region creating its own version.

Pampuch with Raspberries 🍓

A soft steamed yeast dumpling served with vanilla sauce, warm raspberries and mint infused.

Pampuchy, also known as steamed dumplings or yeast pyzy, are especially popular in the traditional cuisines of Greater Poland, Kujawy and Silesia.

ᴢᴜᴢᴀɴɴᴀ Żᴀᴋ – ᴏʀɪᴏʟᴇ ᴡɪᴛʜ ᴏᴛʜᴇʀ ʙɪʀᴅs (𝟸𝟶𝟸𝟹)

🗨️ “When traveling to Chartów I planned to record bird sounds near Radochowskie Lake at sunrise — but I stopped along the way for some shorter recordings. It was mostly because I wasn’t 100% excited about walking in the dark through a forest I barely knew, but it also allowed me different soundscapes in one go.

I sat on the road in a completely random place and stayed there for about half an hour. During this time, orioles precisely reminded me of their presence with their weela-wee-ooo. But even if orioles were loud, they let other birds be heard as well”.

🆎 Tracklista

01. Cuckoo – 02'06"
02. Blackcap And Chiffchaff – 02'03"
03. Chaffinch And Song Thrush – 02'36"
04. Great Tit And Pheasant – 01'38"
05. Song Thrush – 01'48"
06. Woodpecker – 02'46"

“In this nature sounds set, apart from the orioles, you can hear the sounds of cuckoos, blackcaps, a pheasant, great tits, chaffinches, song thrushes, and the greater woodpecker. Enjoy!”.

There’s something magical about eating under the open sky, cooking outdoor, letting simple flavors turn into a true feast. Once again – so much gratitude for these moments and the people around the table. 🌿🥬🫛

Gratitude for the constant learning and for what the garden gives us. Kale is our favorite!

A feast by the fire – smoky grilled vegetables, whipped feta with roasted beets, caramelized carrots, sun-kissed peaches tangled with the sweetest tomatoes from the village, kale gathered straight from the garden.

To feed people is to offer closeness, care, and love. And all of this unfolded during a magical painting workshop created by @slowpaintingstudio - where natural pigments drawn from vegetables turned into colors on canvas. 🌿
