🍎🧺🥪What. A. Day. 🥪🧺🍎

We’re riding high on the success of today’s PACK Picnic!

The best part? Seeing how much this community continues to grow. There were so many new faces, including families with children who were just recently diagnosed with celiac disease (as in two weeks ago, in the case of one child). There is nothing like connecting with parents who get it, sharing experiences, asking questions and realizing you’re not navigating this alone.

And then there were the kids!!!

Watching them run around, make new friends, dig into their bagged lunches and decorate (and devour) their cupcakes with an air of total ease is exactly what PACK is all about.

Everything—the party sandwiches, snacks, cupcakes—was 100% gluten free and celiac safe, which meant that for an afternoon the kids could just be kids. Plus, their parents didn’t have to enquire about the gluten-freeness of the food at this social gathering.

A HUGE thank you to our guest speaker, psychotherapist Meg Labreche, for leading such an important conversation about the emotional side of raising a child with celiac disease and for giving our families a space to ask questions, learn and feel understood.

This day would not have been possible without our amazing sponsors: Kiwow, Neal Brothers, Pally’s, Solly’s, Purplesful Popcorn and Pod Squad Snacks. Thank you for filling our bags and bellies and for supporting this community.

Last but not least, a very special thank you to Edible Options for providing the INSANELY delicious gluten-free bread for all the party sandwiches in our bagged lunches. When a picnic full of celiac families is raving about the bread, you know it’s good.

PACK was created because raising a child with celiac can sometimes feel isolating. Days like this remind us just how powerful it is to bring families together —to build friendships, share knowledge, create safe spaces for our kids and, most importantly, show them that they are part of a pretty incredible community.

Thank you to every family who came, chatted, played, decorated, ate and helped make this day what it was.

This is PACK 🧡

After sitting in my kitchen for the past 6 months today I finally cracked open @mychefman Home Slice Indoor Electric Pizza Oven. This is a beast of a machine that can reach 800F. It comes with 5 pizza presets

Neapolitan
New York
Thin Crust
Pan Pizza
Frozen

Today I opted with the manual option setting both the upper and lower temp to 550F for my first bake which wasn’t the brightest decision. It took about 5 minutes to bake, but I wasn’t happy with the colour of the bottom, and zero charring of the crust. Next time I’ll try the Neapolitan preset which has both the upper and lower temp to 800F, and according to the manual the pizza should only take 3 minutes to cook.

Overall, the pizza was not bad (but also not good). It wasn't sh!t, but high quality sh!t if that makes any sense. The kids enjoyed it. My wife didn't yell at me, so I would say this first bake was a moderate success.

A couple takeaways.

I had a very hard time launching the pizza because I left the pie on the peeler for too long which cause it to stick. Will use semolina next time to act as the ball bearing between the dough and peel.

You can never have enough cheese on pizza, so will add more cheese next time.

Underestimated how much the pepperoni shrinks once cooked, so will add more pepperoni next time.
It was my first time using Ezzo pepperoni and to be honest I'm not a fan. It tasted more like a salami imo. If you noticed that some looked under cooked, and the bake want balanced it's because I added more pepperoni during the bake lol. I will not do that next time.

For all the pizza savants out there please send me any tips and recommendations on producing a good pizza. Just a rookie here, and eager to learn!I'm very excited to put my new toy to use regularly so PLEASE come at me! What's your choice of pepperoni? What sauce do you use? And the cheese? Please let me know. I'm all ears!

Mortadella Pistachio

This combination has been a staple in my life, mostly in a panino, but amazing on a pizza bianca. If you haven’t tried it, you’ll thank me later!

with a soft cheese and fresh mozzarella, baked on my @darebuilt baking steel then topped post bake with @share_mastro mortadella, chopped pistachios and extra virgin olive oil. I tend to cook this a little lighter than a typical pizza, but enough to give a stable base to hold the mozzarella.

Trust me, you will love this and will keep coming back for more!

Grandma Vodka Pepperoni 🍕

To prep this grandma pizza, my homemade dough sat at room temperature for 3 hours before placing on a 12”x12” @lloydpans with oil and then formed to the pan, reforming twice more at half hour intervals or until desired shape and size.

This pizza was par baked for 7 minutes at 500°F then topped with mozzarella loaf, low moisture mozzarella (around the edges), fresh mozzarella, homemade vodka sauce and @ezzosausageco pepperoni then back in for another 7 minutes and topped with pecorino Romano post bake.

Cooking on my @darebuilt baking steel makes a big difference, it helps stabilize oven temperature and creates that perfect cooked bottom.

Give it a try and you’ll love it - feel free to reach out with any questions!

Spicy Vodka Pie!

My first pie of of the Dome in 2023 and it was delish! This pizza was made with my homemade dough RT 1 hour and CT fermented for 48 hours. Pizza was topped with mozzarella and homemade spicy vodka sauce using @gretzkyestates No. 99 Ice Storm Vodka.

Pizza was cooked in my @gozney Dome then cut on my @watermarkboards thanks to the amazing @nu2ucorp front shelf!

Let’s just say there will be a ton more vodka pies coming out of the Dome this summer!

A classic combo that can’t be beat! 👌🏼

Had a small dough ball left from my last batch and thought it would be perfect for lunch.

No better combination than @share_mastro Mortadella with pistachio, soft cheese topped with olio d’oliva. This was is a classic panino combo I and many else grew up with.

Buon Appetito!

Deluxe 2.0

The Mrs made a request for a past favourite, the deluxe. A deluxe consists of pepperoni, mushrooms and green peppers - I added onion and bacon to the mix to truly call this a deluxe! Cooked in my @kitchenaid_ca with the use of two @darebuilt #bakingsteel for that perfect finish.

🥘 @darebuilt 16” and 22”x14” Baking Steels
🍕 @ezzosausageco Supreme Pepperoni
🥫 @mutti_canada Passata
🧀 @ingredients_by_saputo Mozzarella
🥓 @preschoice Bacon
