Éric Guérin ⭐️ the visionary behind La Mare aux Oiseaux, crafts a cuisine rooted in instinct, emotion, and the raw beauty of the Brière marshes. From @latourdargentparis to the Eiffel Tower’s JulesVerne his journey blends French gastronomic heritage with artistic freedom.
Today, his maison stands as a remarkable 16/20 Gault&Millau destination, shaped by local producers, social responsibility, and a deep respect for nature’s rhythm.

.
At Le Taillevent, gold and porcelain set the table.
The Cluny collection enhances every dish with the elegance of its scalloped shape and the delicacy of its gold lines.

This house has a story most people don’t know. Taillevent has been in the same 1852 mansion since 1950 - built for the Duke of Morny, Napoleon III’s half-brother, and later used as an embassy (with bulletproof windows) before it became this restaurant.
And the courtyard - the fountain, the statue, the cobblestones - is what Pixar’s animators came to study for « Ratatouille. »
Then there’s the service itself, which is its own kind of show: a tasting menu called « Gestes » Eighty years in, and they still do it this way.

Last night felt like watching that history get handed over. @sperandiogiuliano spent years reshaping this place quietly - modern, but respectful of what it’s always been. What a great chef. Big shoes to fill.
@philipchronopoulos only weeks in, filled them like he’d been cooking here for years. Two Michelin stars, almost 80 years of history, and the kitchen still felt alive and curious. That handover is hard to get right, and they got it right.

None of it works without the wine, though. Huge thanks to sommelier @tomtommelier , who made every pairing feel obvious in hindsight - starting with @bereche_champagne_officiel , moving through @domainemikulski on Chablis and Meursault, into the reds, and finishing with @barbeitomadeirawine and @armagnacsdarroze . A few other incredible bottles must be mentioned too - Raveneau, Henri Germain, Gourt de Mautens, Grange des Pères, Fontcinen.

@letaillevent - in good hands.
