Le jour où j’ai rencontré Monsieur Andreas Mavrommatis, j’avais 21 ans et travaillais pour Monsieur Robuchon, où je participais notamment à la préparation des recettes des chefs invités pour l’émission de cuisine « Bon appétit bien sûr ».

Lorsque j’ai croisé Monsieur Andreas pour la première fois, j’étais jeune et admiratif, face à un chef qui faisait déjà rayonner la gastronomie grecque à Paris.

Il s’était montré d’une incroyable gentillesse et semblait heureux de rencontrer un compatriote, même si je n’étais qu’un tout petit à côté de lui. J’ai été profondément touché par sa générosité. Accessible, bienveillant et profondément humain, il m’avait d’ailleurs dédicacé et envoyé, quelques jours plus tard, l’un de ses livres, un geste qui m’a marqué et que je n’ai jamais oublié.

Au fil des années, j’ai eu la chance d’apprendre à mieux le connaître. Je me souviens particulièrement d’un dîner exceptionnel au restaurant Mavrommatis, avant qu’il ne reçoive son étoile.

C’était un homme au très grand cœur, passionné, généreux et visionnaire. Un travailleur infatigable, animé par l’envie de transmettre, de partager, de donner du plaisir et de faire rayonner sa culture. Avec ses frères Evagoras et Dionysis, Monsieur Andreas avait accompli un travail immense, un héritage qui perdure encore aujourd’hui et qui continue de mettre la Grèce à l’honneur avec respect, fierté et beaucoup d’amour.

Aujourd’hui, je garde le souvenir d’un grand homme, d’une sensibilité rare, qui aura marqué la gastronomie et tous ceux qui ont eu la chance de croiser son chemin.

Toutes mes pensées vont à ses frères et à toute sa famille, avec beaucoup d’affection.

Today, I was honestly touched when my chef’s, Mathieu and Alex surprised me with a skateboard. 🛹✨
Not just a gift, something so personal and thoughtful.

Skateboarding has been my passion alongside cooking for years. Both shaped me, discipline, persistence, falling hard, getting back up, feeling the pain, the quiet wins that teach resilience, humility and patience.
That same spirit carries into the kitchen and my cooking, the drive, the respect, the love for the craft and the determination to rise after every fall.

After all the hard work, it suddenly feels effortless, landing a trick or perfecting a dish.

I feel truly grateful to be surrounded by people who notice and embrace that part of me.

Corfu is more than just a destination to me, it’s a part of who I am.
Every summer of my childhood was spent there, near my grandfather, in the warm embrace of a place that felt like home in every sense.

He once owned a small restaurant in the heart of Corfu, called Chrisomalis.
I never got to see him behind the counter or at the stove, but he was always cooking for us at home, and that was magic enough.

I still remember the irresistible aromas of his food. He had a gift, not just for preparing delicious dishes, but for infusing every meal with a deep sense of love. He cooked from the heart, and you could taste it.

His cooking was never just about food, it was about making people feel something. He brought happiness through every dish.

Today, I carry those beautiful, flavorful memories with me.
And now, I’m grateful to share that same love of food, family, and tradition with my wife and our children, a little piece of my pappous living on, summer after summer. by @philipchronopoulos

Alex is my oldest friend, we grew up together. Reconnecting with him and my family felt incredibly special.
