A whirlwind trip to Guernsey for lunch at @vraicrestaurant, the island’s first Michelin star in 10 years. @nathandavieschef is a rare chef who brings equal competency and creativity to both savoury and sweet dishes - and the menu is a perfectly balanced journey showcasing the best flavours of Guernsey, but particularly highlighting local seaweed.

A perfectly choreographed lunch, everyone eating the same course at the same time with a carefully selected accompanying soundtrack.

I’ll remember this menu for a long time -

🍸 Seaweed Martini
🦀 Crab - Seaweed - Hazelnut
🌊 Seaweed Broth
🍞 Welsh Grains - Cultured Miso Butter - Beef Dripping
🦞 Lobster - Soy - Black Garlic
🐟 Turbot - Burnt Butter - Plankton
🥩 Beef - Mushroom
🧀 Guernsey Milk Cheese (Supplementary course £15)
🍋 Guernsey Lemon - Burnt Meringue
🍫 Chocolate - Milk - Grains
🍓 Strawberries - Elderflower - Sour Cream

🍬 Salted Chocolate - Burnt Butter Fudge
Strawberry Jelly - “Nana Builths” Welsh Cakes

Happy Easter everyone - this weekend, like coffee, is all about connection and bringing people together 🫶🏻

No matter where you are in the world, coffee creates a moment of connection. Different cultures, different languages, same ritual.

It’s more than a drink ☕️ it’s something we all share 🥰

Rhubarb lovers, look this way! 👀 Those geometrically exact, almost impossibly perfect looking rhubarb tarts are cool and all that, but have you experienced the unbounded joy of tearing into one of @burnt_restaurant twice baked rhubarb almond croissants? Darkly caramelised and brazenly crisp, weighing the best part of half a kilo, fat and fudgy filled to the brim with a perilous amount of frangipane and @shrub.london rhubarb - threatening to collapse in on itself under its sheer heft but reinforced by an armour of crunchy baked frangipane on the outside. Swipe for the team work from myself and @lickyplate to get the shot 😎 We’re croissant pros 🥐
