Continuing with dishes I make in my kitchen with roots in Italian/ItalianAmerican food traditions. CALZONE AL FORNO with spinach. Red onion. Pecorino. Mozzarella. Black pepper. ricotta. Wow. Delicious. I love making calzone. Italian word lesson for today. One is a calzone. Two or more are calzoni. Calzoni are a southern Italian stuffed pouch/turnover made from pizza/bread dough. Most popular fillings are ricotta. Mozzarella. Cured meats. Meatballs. Sausages. Tomato sauce. Peppers. Olives. Mushrooms. Onions. They are either fried or baked. In Napoli they make then either baked with a topping of tomato and mozzarella or fried. Or just plain baked. When they are baked I like them a bit well done, which sort of mimics the wood ovens of Napoli. And fried..well, they are a foodie dream come true...best way to describe it would be that they taste like an Italian feast Zeppole that's stuffed. #afoodobsession #calzone #italianamerican #homecooking #sausage #ricotta

My All-in-One Prep & Cooking Day

A full counter today means less cooking tomorrow. Turning my farmers market haul into meals for now and later.

I plan around fresh ingredients that can work in a few different dishes, then get the prep and cooking done in one swoop.

Today, that means eggplant caprese stacks with pesto and my fall roasted marinara sauce, using breadcrumbs from A&S Fine Foods in Westport and local fresh ct mozzarella. I love bringing a little more local goodness into what we’re cooking.

I’m making enough for caprese sandwiches later this week, sauce for a pasta night, and extra sauce to freeze for the coming weeks.

A little planning turns a couple of dishes into about five meals—and makes the rest of the week so much easier. Fresh ingredients, less waste, and homemade gluten free food ready when we need it.

Our pizza gets a lot of attention, but let’s give our calzones a little love, too!

Golden on the outside, filled with cheesy goodness on the inside. We use Liuzzi ricotta, because it’s THE BEST and it’s local!

Who’s ordering a calzone next time?

Sharing another pie from our company's end of summer picnic. This one is a classic NY style, white pizza with generous dollops of ricotta cheese over East Coast blend of mozzarella and a hot honey drizzle, over a sesame seed, sourdough crust!

If you like what you're seeing from me, please give me a like, a share and a follow! Your support is always appreciated.
