Indigo Farm had a surplus of bok choy this week, so I’m hoping this recipe encourages our neighbors to grab some and enjoy it! FREE Bok Choy can be found in front of Della Coffee & Wine this afternoon until 6pm. Come get some, make this recipe and let us know what you think.

Spicy Crunchy Baby Bok Choy
Ingredients:
8-10 baby bok choy
2 Tbsp grated ginger
3 cloves garlic, minced
2 Tbsp soy sauce
2 Tbsp honey
1 Tbsp sesame oil
Juice from half a lime
Optional: 1 spicy pepper, minced
Optional: chili crisp and chopped scallions for garnish

Steps:
1. Wash., dry and arrange the bok choy whole (or cut lengthwise for larger bok choy) in a 9x13 baking dish.
2. Make the sauce: combine ginger, garlic, soy sauce, honey, sesame oil, lime juice and pepper in a bowl and whisk until evenly mixed (the sauce will be lumpy, that’s okay).
3. Pour the sauce over the bok choy and toss within the pan to coat the bok choy in sauce.
4. Place in the oven under the broiler for 10 minutes or until edges are brown and crispy.
5. Optional: top with chopped scallions and spoonfuls of chili crisp, then enjoy over a bowl of jasmine rice or noodles, or as a standalone side dish.

Popular Montrose coffee shop Della Coffee has officially opened its second location, this time inside Indigo @live.indigo , a new Richmond community designed around walkability, local businesses, green spaces and a neighborhood town center. Indigo also has 42 acres dedicated to agriculture, and Della sells seasonal produce grown at Indigo Farm when available.

☕️ Drinks I tried
• Sakura Matcha
• Fireside Chat
• Fiona’s Apple ⭐️ My favorite — cold brew, apple-spiced syrup + sparkling water

🥐 Pastries
• Sourdough Cinnamon Pecan Roll ⭐️ My favorite
• Plus a rotating selection of house-made pastries

🥪 The Richmond location expands on the original Della concept with an afternoon menu, including sandwiches like the CBLT and Prosciutto Caprese, along with salads and other food.

🍷 And unlike the original Montrose shop, this is Della Coffee + Wine, adding a wine and market experience and staying open later into the evening.

Arugula & Basil Pesto is the perfect, bright green flavor punch to make use of the abundance at the farm!

Ingredients:
- 3-4 cups packed arugula leaves
-3-4 cups packed basil leaves
-2 cups cooked green peas
- 1.5 cups roasted almonds
- 1/2 cup grated pecorino
- juice and zest of 1 lemon
- 1 garlic clove, grated
- plenty of salt, pepper and good olive oil

Steps:
1. Place greens, peas, almonds and cheese in a large blender. Pulse and then blend until just chopped and combined.

2. Add a few glugs of olive oil, plus some salt and pepper and the lemon juice, zest and garlic.

3. Blend over a minute or two, starting with a slower speed and increasing speed as it blends. Open up the top hole of the blender pitcher and drizzle in olive oil as you blend until desired consistency is reached.

Taste the pesto and add more salt & pepper as needed. Serve tossed with pasta, as a pizza sauce or spread on crackers. It also works great mixed into avocado mash for a flavorful extra-green avocado toast. Enjoy!

Basil and arugula from @live.indigo farm now available at @dellacoffeeandwine

🏡✨ WHAT IF YOUR NEW HOME CAME WITH AN ENTIRELY SEPARATE LIVING SPACE?!

This is one of my FAVORITE options available with select Autograph Homes at Indigo floor plans — and I don't think enough people realize how useful this space could be! 😍

Our Potter, Rowling & Wilder plans offer the option to convert the attic space above the garage into a PRIVATE STUDIO! 🔑

And when I say private…I mean PRIVATE.

✨ Separate entrance on the side of the garage
✨ Private staircase leading directly upstairs
✨ Full kitchen
✨ Living/sleeping space
✨ Additional privacy from the main home
✨ Located above the garage

Think about the possibilities! 🤯

👵 A private space for Mom or Dad
🎓 A college-age child who wants independence
👨‍👩‍👧 Multi-generational living
🏡 A returning adult child who needs their own space
💻 A private work-from-home setup
👩‍⚕️ A live-in caregiver
🎨 A creative studio or personal retreat
👨‍👩‍👧‍👦 Extra space when family comes to stay

Your family can be close without everyone having to live on top of each other. ❤️

And because the studio has its own exterior entrance, someone can come and go without having to walk through the main house.

Choose from:

🏡 THE POTTER — 2,034 base sq. ft.
🏡 THE ROWLING — 2,162 base sq. ft.
🏡 THE WILDER — 2,467 base sq. ft. + THREE-STORY living!

All available to build in the beautiful Indigo community in Richmond, TX. 🌿

Come select your homesite, personalize your home and ask me about adding the studio-above-the-garage option!

📍 Autograph Homes at Indigo
3344 Loam Lane | Richmond, TX

📩 Message me directly to schedule your private tour and let me show you how this studio option works!
