Restaurants across the country are scaling back their pastry programs, but San Francisco's pastry chefs, chocolatiers, and bakers are proving the opposite is possible here. Chocolatier Mark Lieuw (@onebakersjourney) of Stay Sweet SF (@staysweetsf) says San Francisco is the only place outside Paris where people argue over croissants the way they argue over burritos. Pastry Chef Yesenia Castañon (@quenelladville) of JouJou (@sfjoujou) credits the community itself, a network as quick to help solve a problem as it is to celebrate a win. We asked the Bay's sweeter side for their honest take on the industry, and their best advice for building a career in it. Read more via the link in our bio.

🍽️ 24 years old. Stay with your mentor or take the job they left behind? Chef Melissa Perello (@M_Perello of @SF_Frances, @SF_Octavia and @Lorella_SF) reflects on the career crossroads that changed everything. When her mentor, Chef Ron Siegel (@RSChef), left Charles Nob Hill for a new opportunity, Melissa had a choice: follow him or step into his role as executive chef. She chose the role. Looking back, Melissa credits that leap with putting her on the fast track toward everything she’d go on to build. 🎧 Tune in now to @HospitalityOnTheRise (@Apple, @Spotify, @YouTube)! 🔗 in bio. 🔥 12 years of going nonstop. Then Chef Melissa Perello hit a wall. Burnout didn’t just make her rethink how she was working. It made her rethink how she wanted to cook. After building her career in fine dining, @M_Perello realized she was running on empty, and it wasn’t just work fatigue. She found herself craving food that was simpler, more rustic and less formal. That shift became a turning point, helping shape an entirely new chapter of her career and cooking style. 🎧 Tune in now to @HospitalityOnTheRise (@Apple, @Spotify, @YouTube)! 🔗 in bio. 🌱 POV: There’s nowhere left to grow at work. So your chef creates the opportunity. 🎙️ Melissa Perello (@M_Perello), Chef Owner of @SF_Frances, @SF_Octavia, and @Lorella_SF, shares how growth for her team, not just her brand, has driven her decision to open new restaurants. She had room for just 4 cooks at Frances. When her team was ready for their next move, she realized they needed more room to grow. Octavia created a bigger role for her sous chef. Lorella created a new opportunity for pastry chef @MelissaLoar, now her business partner. For Chef Melissa, growth isn’t just about opening more restaurants. It’s about making sure the people who helped build them can keep moving forward, too. 🎧 Tune in now to @HospitalityOnTheRise (@Apple, @Spotify, @YouTube)! 🔗 in bio. Some ovens arrive in pieces. This one arrived as a mission! Before the sun came up, our team moved @lorella_sf ‘s fully assembled oven with trucks, forklifts, machine skates, pallet jacks, and a whole lot of teamwork! We had to get it into place BEFORE building the wall around it. Or, as project manager John put it: “building a ship in the basement” 🚢 Full steam ahead! 🫡🙌🥐
