Great drinks aren’t improvised, they’re built.

From the first idea to the final pour, every detail matters: flavour, balance, consistency and presentation.

At Brim, we turn ideas into drinks that work behind the bar and make sense for the business.

Concept ▶️ Development ▶️ Execution

Fill it to the Brim.

Brim: High Class Care, Low Cost Fare.

Do you know what the Americano was before it became the drink we know today?

It wasn’t originally a recipe. Americano was a concept: a vermouth-driven combination with a touch of bitters. Long before the Milano-Torino story and before the first codified Americano recipes, Italian producers were already shipping products described as Americano to the US in the 1850s.

The Americano we know today follows the Milano-Torino formula of the 1930s, when bitter and vermouth appeared in equal parts for the first time, with soda completing the drink.

Before then, Americano recipes followed a different balance: vermouth always led the recipe, with bitters playing a supporting role.

And the lemon zest? Italian bartenders traditionally garnished the Americano with lemon zest. Lemons were available throughout the year, while oranges were considered expensive, almost tropical fruits and were only available seasonally.

This is our twist on the classic, created for one of our clients following that original philosophy.

Great drinks aren’t improvised. They’re built on knowledge. Let Brim build yours.

Feeling so grateful.

Grateful for a pregnancy that has been so kind to me, for a body that was ready for this journey, and for all the love we’ve been surrounded by.

As excited as I am to meet our little one, I’m also saying goodbye to the chapter of “just us.” It’s bittersweet.
I’ll always treasure this part of our journey, but I’m ready to see what the next one has in store for us 🩵

A cocktail menu is only as strong as the team serving it.

You can spend weeks developing the perfect drinks, but if the team doesn’t understand how to explain them, recommend them, and execute them consistently, the menu will never reach its full potential.

Training is not something you add at the end of a menu launch.

It is part of the menu.

A strong training system helps the team build confidence, improve guest conversations, protect consistency, and increase sales naturally.

Better knowledge.
Better service.
Better sales.

That’s where a bar program starts to work properly.

Chain Reaction is a vibrant sensory journey inspired by digital worlds, fragmented memories, and unexpected transformations.

Hendrick’s Gin, Green Chartreuse, Eve Mediterranean Liqueur, and Acqua Bianca blend seamlessly with Velvet Bubbles to create a cocktail that evolves with every sip—revealing new layers of flavour and perception as reality begins to blur.

Details are never just details. They are the difference between serving a drink and creating an experience.

At BRIM, we believe exceptional hospitality shouldn’t be exclusive to luxury venues. Our mission is to bridge the gap between world-class bars and independent businesses by providing bespoke training, ready-to-pour cocktail solutions, operational strategies, and sustainable business development.

Because excellence isn’t about the size of the venue, it’s about the standards behind it.

Great hospitality should be achievable, not exclusive.

A great cocktail menu only works when the team can execute it consistently.

That means the knowledge cannot live only in someone’s head.

Recipes, batches, prep, garnish, storage, costing, allergens, and service standards need to be documented clearly enough that the bar can perform even when the key person is not there.

That is what a Bar Bible does.

It protects quality.
It speeds up training.
It gives managers control.
It turns good intentions into daily standards.

Better bars are built on standards, not memory.

From the turquoise shores of Turks & Caicos to the vibrant energy of Ibiza, every successful hospitality concept begins with a clear vision.

This project presented an exciting opportunity: a venue with tremendous potential that needed a distinct identity, operational direction, and a guest experience designed for long-term success.

Our consultancy delivered a complete transformation, including:

• A redesigned interior and terrace layout to enhance flow and atmosphere
• A new menu focused on sustainability, seasonality, and zero-waste principles
• Strong partnerships with local farmers and suppliers to showcase regional ingredients
• A reimagined bar setup to improve efficiency and elevate the guest experience
• Comprehensive team training to ensure consistent service excellence

All achieved while maintaining strict cost control and never compromising on quality.

Creating concepts with purpose, sustainability, and profitability at their core.
