Dual extraction—what is it and why do we do it?

We get this question all the time, and we’re kicking off a new video series to answer it (and so much more). In this first episode, we dive into why we use dual extraction for our tinctures, the benefits it unlocks, and why we remove the alcohol—without compromising potency.

Follow along as we share more about our process, our mushrooms, and the rituals that support wellness from the inside out.

And meet Bert—our in-house mad scientist and force behind both the tinctures and these fun, educational videos. He’s been hard at work bringing these powerhouse mushies to life and finding new ways to help you enjoy them every day. We’ll be posting all sorts of videos, so stay tuned!

At Golden Gills, the source of our ingredients is at the heart of our production process. From the meticulous selection of cultivation strains and trusted wholesale partners to the careful harvesting and sun-drying of our #reishi mushrooms, to the ultrasonic extraction process, we ensure every step prioritizes potency, including maximizing vitamin D content when possible.

Reishi is renowned for its powerful immune-boosting and stress-relieving properties, making it a cornerstone of our functional tinctures.

One week ago, we opened the doors to our new facility, inviting everyone into the space we’ve been working tirelessly to build since mid-June.

Watching people eagerly explore the areas we’ve created moved me to tears throughout the day. Seeing Taisa expertly lead tours, manage orders, and craft functional mocktails, while Andrea stepped in to share our processes with familiar and new faces alike, filled me with a pride I hadn’t anticipated.

Bert and Whitney (who happened to be visiting from Knoxville) ran a smooth and efficient food pop-up, demonstrating what’s possible when we all come together. Hearing such positive feedback on the food made all those long days worth it. It only reinforced what I have felt all along about the wonderful humans around me.

The day before, Olek and Chris offered invaluable hands on help, and I’m deeply grateful for the extra hands and support we received leading up to the event.

This move has tested the patience, flexibility, and foundation of everything and everyone involved. Days have bled into nights, and weeks into months. I don’t think many understand all that goes into running these small but mighty farms. We’re exhausted in so many ways, yet days like last Sunday make it all worthwhile.

Above all, I was overwhelmed by the outpouring of community and support. So many friends and family from the city and beyond made the journey to see what we’ve been up to, and it was truly special to share a glimpse of our world with them.

To top it off, we were gifted beautiful cyanotypes by the beautiful @terra.insignia as well as an incredible pistachio buttercream cake by Andrea’s talented sister, @selena.genevieve which was the perfect sweet ending to an unforgettable day.

Thank you to the incredible Golden Gills family, I am forever in your debt and in awe. ❤️❤️❤️

Early this morning, @taisa_koval and I delivered the final CSA shares of 2024 to @elawafarm.

This summer, we proudly provided 500 half-pound shares of our cultivated mushrooms to the communities of Lake Forest, Lake Bluff, and the surrounding areas. Each Friday, we also offered a selection of fresh mushrooms, tinctures, powders, and dried products at the Elawa Farm market.
A true highlight was having @luxardobob prepare our signature banh-mi taco, breakfast taco, and the popular Italian sandwich, showcasing just how versatile and flavorful mushrooms can be.

Throughout the season, we consistently received one common question: ‘How do I cook these mushrooms?’ Our weekly pop-up allowed us to connect with the community, share our knowledge, and offer practical ways to incorporate mushrooms into daily meals.

We are deeply grateful to the team at Elawa Farm for welcoming us and supporting our efforts throughout the season. Their commitment to showcasing our work helped us form lasting bonds within this wonderful community.

As we look ahead to 2025, we’re excited to continue growing for you. Our autumn 10-week CSA is open for enrollment, with convenient pickup locations at our headquarters, Elawa Farm, and Chia Leah in Wilmette. Thank you for your continued support!

Let’s fill that mushroom-shaped hole in your heart!
Link to sign up for the CSA is in bio.

Today marks 33 years of Ukraine’s independence. It’s a rather bittersweet milestone in the face of ongoing hardship, that is literally reverberating throughout the world.

We stood with our loved ones and the Chicago Ukrainian Village community who were reflecting on the strength, resilience, and deep losses the Ukrainian people have faced both here and back at home. The day ended with a heartfelt meal at @tryzubchicago, where we found comfort in the warmth of food that tasted like home.

Speaking of homes, this anniversary date marks day 913 of r*ssia’s occupation of Ukraine. For those keeping track, that’s 2.5 years of continued displacement, overnight life upheaval and utter and complete terror in every region of Ukraine.

Tomorrow will be 914 days unless something changes.
