People that raise trout for living got on a plane and flew to New York last weekend. ✈️

Brought the Smoke In Chimneys media team and family to the city. Probably could have bought a gently used Mazda 3 with how much we spent on Ubers alone.

It was really humbling to see the trout prepared by such talented chefs. We send trout to @familymealatbluehill and @chefstablebrooklynfare every week, so it was a really special, full circle experience to be able to eat there.

Big thanks to @markybayer at @runnerupbk for helping us put on the first ever Michelin-Guide trout tasting event. He absolutely crushed the menu 🐟

Thanks to everybody who came to our event on Saturday, it was great to be able to meet y’all outside of this Meta Universe 🌎

Stay tuned to see where the frogs ended up 🎥

Chef Josh Niland is Australia’s most famous fish chef, renowned for pioneering low-waste, “nose-to-tail” seafood cooking and dry-aging fish like meat

Chef Josh Niland, renowned pioneer of whole-fish butchery and cookery, crosses an ocean to kick off Climate Week with a fundraiser dinner at Blue Hill at Stone Barns alongside Chef Dan Barber. Together they create a meal that explores what role the sea should play in a truly sustainable Northeastern cuisine. Proceeds from this fundraiser support Stone Barns Center.
