Hey guys . It’s me, your old friend Nick. . Well, I’m 40, and I think I may still overuse commas, but at least I wrote this using what I remember from my public school education English classes which set me up beyond my Freshman year college English classes. . Anyway, all I want for my birthday is for you to vote in the upcoming Midterm Election on Tuesday, November 3. . Check your voter registration and make a plan to vote either by mail, early in-person or day-of in-person, how’s that for hyphens? . If you really love me, you’ll get one person to vote. . If you REALLY love me you’ll get one person registered AND out to vote. . Ok? It’s not much and it’s free. . Link in my bio! Thanks so much! . Always, Nick

On our last night in the Catskills, we wanted to have a more special dinner. We were split between @matildacatskills and Stissing House, but the latter was fully booked. Located in @staythehenson, Matilda‘s menu is centered around local ingredients. The dishes are definitely more “upscale”, but it doesn’t feel “forced” or too “try hard”. The atmosphere of the place was amazing: moody lighting, candles, cozy “inn” vibes with a modern twist… On to the food! We ordered quite a few dishes and whilst we actually enjoyed all of them, there were two standouts. But let’s not get ahead of ourselves and start with the sourdough. Man, that was some perfect sourdough + butter combo… As a starter, we tried the dauphine potatoes with lady edison ham and basil. The potato was fried and crunchy whilst not being too heavy, and the ham was perfectly salty. The little freshness from the basil was a really nice touch as well. Our second starter was the sumac crackers with confit tuna belly and preserved lemon. A super light cracker with very tender and well seasoned tuna belly - it was really a perfect little bite. For mains we ordered the Amish golden chicken with negi and spring onion. Now, this might be the best chicken I’ve ever had…! The meat was so juicy, so flavourful, so soft and just no inkling of dryness. The crispy skin was perfect and the sauce just tied everything together with a perfect little bow. This is really a must order if you go! Our dessert was another standout dish: a salted hazelnut chocolate tarte with olive oil. The shell was so thin whilst still holding the most delicious hazelnut/chocolate mousse. It was a perfect romantic end to our trip and I cannot recommend going there more if you’re visiting the Catskills. I hope the next time I go for dinner here it will be as a guest in their hotel! This restaurant and inn is tucked away in a little hamlet in the Catskills that is remote enough you might lose cell service. Which might be my favorite part: truly unplugging and immersing in the idyllic setting. The Henson opened in 2024 and has quickly become a known destination in the world of hospitality. The historic building is designed to be contemporary rustic that stays true to its Catskills heritage while feeling like a luxury boutique hotel. Matilda offers big city culinary chops packaged with small town charm. From the team behind Wildair and Contra, Matilda captures the best of Hudson Valley bounty (most of the ingredients are locally grown and raised) while also some of the finesse of the NYC culinary scene. The food is anchored in simple farm ingredients, but reimagined inventively with some global perspective. A meal here feels comforting and refined, making you relish the beauty in the little things, sitting in a beautiful mid century modern cabin chic dining room, getting that first spoonful of a seasonal ice cream sundae and remembering that this is the whole point. ✲ Matilda, Hensonville (Catskills, Upstate New York) → Order this: the amish golden chicken, whatever seasonal veg they have going on, and the matilda sundae for dessert → $$$, sharable plates run from $15-55 #upstatenewyork #catskillsny #boutiquehotel #restaurantdesign
