✈️👩🏻‍🍳 Pilot Food Diary - Episode 11 🗽🍰 The Secret of the Perfect New York Cheesecake Creamy, smooth, perfectly flat and no cracks. 🤍 And the secret? Less air, low temperature and a water bath. I made a baby version in the reel, but here are the ingredients for a 24 cm cake tin: For the cookie base: • 150–200 g crushed cookies • 100–150 g melted butter For the cheesecake filling: • 2 eggs • 100 g sugar • 500 g cream cheese • 100 g sour cream • Vanilla extract For the topping: • 200 g sour cream • Juice of ½ lemon • 3–4 tbsp powdered sugar • Fresh blueberries 🫐 Method: Mix the crushed cookies with the melted butter until you get a soft, slightly sticky mixture. Press it firmly into the cake tin and bake at 180°C fan for 10 minutes. Mix the eggs with the sugar, then add the cream cheese, sour cream and vanilla extract. ✨ Secret No. 1: Less air! Don’t overmix the filling. Air bubbles expand while baking and can make your cheesecake rise and crack. Let the mixture rest for 10–20 minutes or gently tap the bowl on the counter a few times to release the bubbles. Pour the filling over the baked cookie base. ✨ Secret No. 2: The water bath! Place the cake tin inside a larger baking dish filled with hot water. The water creates gentle, even heat and helps prevent the edges from overcooking while the centre sets. Bake at 130–140°C for around 30–40 minutes, depending on your oven and the size of your cheesecake. The centre can still have a slight wobble when you take it out. Let it cool completely and refrigerate for 6–8 hours — or even better, overnight. ❄️ For the topping, mix the sour cream with powdered sugar and lemon juice. Spread it over the completely chilled cheesecake and finish with fresh blueberries. And there you have it… Flat. Creamy. No cracks. The perfect New York cheesecake. 🗽🍰 💾 Save the secret for your next baking day. 🤍 #pilotfooddiary #newyorkcheesecake #cheesecake #recipe #newyork

I saw @maxbrady01 turn sweet potatoes into homemade cereal and immediately knew I had to try it. Credit where credit is due…, his creation inspired this one. Of course, I had to put The Homely Cook spin on mine. I added oats, butter, maple syrup, cinnamon, pumpkin pie spice, vanilla and raisins, then finished everything with a drizzle of honey. Instead of regular milk, I poured cold oat milk on mine. Sweet potato cereal sounded a little questionable at first…but after that first bite? I understood the assignment. Now don’t this look DISRESPECTFULLY GOOD? Would you try it? Inspired by @maxbrady01 #FYP #DisrespectfullyGood #SweetPotatoCereal #SweetPotatoRecipes #WorldlyBites

I honestly expected this sweet potato cheesecake to be a complete disaster… 🍠 I first saw the idea here on Instagram and I was very sceptical. Sweet potato in a cheesecake? I wasn’t convinced at all. But the first bite completely changed my mind. The combination of sweet potato, eggs, vanilla, walnuts and cinnamon is absolutely divine — creamy, warmly spiced and seriously delicious. 🤎 I changed several ingredients and adapted the recipe to my own taste, and I’m genuinely so happy with how it turned out. Comment 🍠 if you want the full recipe and I’ll add it in the comments. Thank you @maxbrady01 for the inspiration behind this recipe. ✨ #sweetpotatocheesecake #sweetpotatorecipe #bakedcheesecake #healthydessert #easyrecipes homemadedessert dessertideas foodreels instafood recipeinspiration
