Sweet Potato Acai Bowl

A thick and creamy açaí bowl made with sweet potato instead of frozen banana.

INGREDIENTS:
• 150g cooked sweet-potato 
• 150g frozen mixed berries
• 15g açaí powder
• 90ml coconut water
• 20g raw honey
• Extra splash of coconut water, if needed

TOPPINGS:
• Kiwi
• Strawberries
• Banana
• Granola
• Almond butter

METHOD:
1. Mix the açaí powder with 90ml coconut water until completely smooth.
2. Pour the mixture into a small lined tray and freeze until solid—ideally overnight.
3. Roast your sweet potatoes until completely soft, then allow them to cool fully.
4. Slice them open and scoop 150g of the flesh directly into a blender.
5. Add the honey and frozen mixed berries.
6. Break the frozen açaí mixture into smaller pieces and add them to the blender.
7. Blend until thick and creamy, adding only a small splash of coconut water if needed to get everything moving.
8. Spoon into a bowl and top with kiwi, strawberries, banana, granola and almond butter.

Healthy Sweet Potato Millionaire’s Shortbread

You won’t believe what else you can make with a sweet potato 🍠

INGREDIENTS:
Shortbread:
200g cooked sweet-potato purée, cooled
160g almond flour
35g butter, melted
Pinch of sea salt
Caramel:
260g smooth nut butter
110g maple syrup
1 tsp vanilla extract
Pinch of sea salt
Chocolate:
180g dark chocolate
1 tbsp coconut oil

METHOD:
1. Pierce the sweet potato all over, then roast at 200°C for approximately 60 minutes, or until completely soft. Scoop 200g of the flesh into a bowl and mash until smooth—or blend for an ultra-smooth purée.
2. Preheat oven to 180°C and line a square tin with baking paper.
3. Mix the sweet-potato purée, almond flour, melted butter and sea salt until a soft dough forms.
4. Press the mixture firmly and evenly into the lined tin, smoothing the surface with a spatula.
5. Bake for approximately 20 minutes, until golden around the edges and firm across the surface. Leave to cool completely in the tin.
6. Mix the nut butter, maple syrup, vanilla and sea salt until smooth and glossy.
7. Spread the caramel evenly over the cooled shortbread, then freeze for 30–45 minutes until firm.
8. Melt the dark chocolate with the coconut oil, stirring until smooth. Pour it over the caramel and spread it into an even layer.
9. Refrigerate until set, then slice up and enjoy!

1. Pierce the sweet potato all over, then roast at 200°C for approximately 60 minutes, or until completely soft. Scoop 200g of the flesh into a bowl and mash until smooth—or blend for an ultra-smooth purée.
2. Mix the purée, collagen peptides, honey, vanilla and salt until smooth.
3. Pour the orange juice into a saucepan, sprinkle over the gelatin and leave it to bloom for 10 minutes.
4. Heat on low for 3–4 minutes, stirring until completely dissolved. Don’t let it boil.
5. Pour it into the sweet-potato mixture and whisk immediately until smooth.
6. Transfer to a lined square tin and refrigerate until firm—or freeze for 35–45 minutes.
7. Slice into 16 gummies. That’s approximately 2.5g of Fat Cow collagen peptides per gummy.

1 Medium Sweet Potato (200g cooked puree)
400g Oats
90g Peanut Butter 
60g Coconut Oil 
300g Honey
Tbsp Vanilla
Sea Salt (to taste)
200g dark chocolate
Tbsp Coconut Oil 

1. Pierce the sweet potato all over, then roast at 200°C for approximately 60 minutes, or until completely soft. Scoop 200g of the flesh into a bowl and mash until smooth—or blend for an ultra-smooth purée. 
2. Add oats, peanut butter, coconut oil; honey, vanilla and sea salt to the bowl, mix until combined 
3. Add the mixture to a lined baking tray. Press mixture firmly into the edges, making sure it’s level. Bake for 20-25 minutes. Allow to cool fully.
4. Once cooled, mix dark chocolate and coconut oil and pour over the top, spread evenly and leave in the freezer for 20-30 minutes until set. Slice up and enjoy!

INGREDIENTS:
1 Sweet Potato (200g cooked puree)
140g Dates, finely chopped
100g Honey
140g Oats
Sea Salt
Vanilla (optional)

1. Roast a pierced sweet potato at 200°C for approx 60 mins until completely soft. Scoop out 200g flesh into a large bowl and mash until smooth.
2. Preheat oven to 180°C. Finely chop the dates and add them to the bowl with honey, oats, vanilla and sea salt; mix well until throughly combined and you have a solid dough
3. Split the dough into 16 equal sized balls and using a fork, flatten them on a lined baking tray, bake for 10-12 mins until lightly golden around the edges, allow to cool fully and enjoy!

INGREDIENTS:
1 Large Sweet Potato (400g cooked purée)
4 Large Eggs
100g Raw Honey
250g Cream Cheese (grass-fed, organic)
1 Tbsp Vanilla Extract
Sea Salt (to taste)

Optional Toppings:
1–2 Tbsp Raw Honey
1–2 Tbsp Bee Pollen

METHOD:
1. Roast a pierced sweet potato at 200°C for 45–60 mins until completely soft. Scoop out 400g flesh and mash until smooth (or blend for an ultra-smooth batter).
2. Preheat oven to 150°C Fan / 170°C Conventional / 340°F. Line and lightly butter a 7x7” cake tin.
3. Whisk together the sweet potato purée, eggs, cream cheese, raw honey, vanilla and sea salt until thick and completely smooth.
4. Pour into the tin and bake for 50–60 mins until the edges are set but the centre still has a slight wobble.
5. Turn the oven off and leave the cheesecake inside with the door slightly open until cooled to room temperature. This helps minimise cracking and creates a creamier texture.
6. Chill for at least 6 hours, preferably overnight. Drizzle with raw honey, sprinkle with bee pollen (optional), slice and enjoy!

INGREDIENTS:
For the Dough:
1 Medium-Large Sweet Potato (260g cooked purée)
1 Large Egg
2 Tbsp Raw Honey
1 Tbsp Vanilla Extract
Sea Salt
1 Tbsp Baking Powder
350g Organic Wholewheat Flour (add gradually as needed)

For the Filling:
60g Butter
60g Raw Honey
2 Tbsp Cinnamon
Sea Salt

For the Frosting:
120g Cream Cheese (grass-fed,organic)
60g Raw Honey
1 Tbsp Vanilla Extract
Sea Salt

METHOD:
1. Roast the sweet potato at 200°C for 45–60 mins until completely soft. Scoop out 260g flesh and mash until smooth (blend for the smoothest dough). 

Pro Tip:
Chill puree (30 mins-overnight) if possible to reduce moisture and reduce amount of flour needed. 

2. Preheat oven to 180°C. Mix the sweet potato purée, egg, honey and vanilla. Stir in baking powder, sea salt and flour gradually until a soft, slightly sticky dough forms.
3. Roll the dough between two sheets of baking paper into a rectangle about 1cm thick.
4. Mix the butter, honey, cinnamon and sea salt into a smooth paste. Spread evenly over the dough, leaving a small border.
5. Roll tightly into a log and slice into 6 equal rolls.
6. Place into a lined baking dish and bake for 20–25 mins, until lightly golden and set.
7. While baking, mix the cream cheese, honey, vanilla and sea salt until smooth.
8. Spread the frosting over the warm rolls and allow them to cool. For the best texture, chill for 1–2 hours before serving.
