$Attention, Mint Mark faithful: After an unreasonable amount of thought and more conversations with myself than any adult should have to have, I am officially announcing my resignation as Executive Chef at Mint Mark. Now that the bandaid is off, we can get sappy. Mint Mark means everything to me. It always has, from the first time this team welcomed me through the doors of the old space to the doors of the new. We did this. Every service. Every night. Every prep list that somehow got longer instead of shorter. Every new face that became part of our collective identity. Every plate that made us stop and think, “woah, we’re actually pretty good at this.” Somehow, we took a place that was once a fraction of what it is now and grew it to FOUR TIMES its size—and got nominated for a James Beard Award while doing it. That is an incredible feat, and it belongs to this team. I could not be prouder of what we built, or more grateful for every person who poured their time, talent, heart, creativity, and patience into making Mint Mark what it is today. I am not leaving because I stopped caring. Quite the opposite. This place has given me more than I could ever put into words, so I intend to put it into action through what I do next. As for what’s next… I AM STILL FIGURING THAT OUT. You’ll all know when I know. The Hungarian dinner coming up will, for me, be something of a last supper (thankfully with significantly better food and hopefully fewer... anyways). I would love to see as many of you there as possible. To my team: thank you will never be enough. Thank you for trusting me, challenging me, showing up, giving a damn, and making me better. And thank you for proving that the best thing any leader can build isn’t a menu or a restaurant—it’s a team that can make something extraordinary together through buying into a common goal. Mint Mark will always be one of the most important chapters of my life. I am so incredibly proud that we got to write it together. 🤍✨ Love you, Kasey Lee Cooke$
