We have been having such a gorgeous little honeymoon along the Great Ocean Road. Our first holiday in a long time. There’s something so vast and expansive about this area, which echoes how I feel inside.

We all worked super hard in the lead up to the wedding - with Michael growing all of the food for our guests and me and our family and friends doing lots of DIY organising to create a celebration that was uniquely us, budget-friendly, and aligned with our values. So many loved ones took time out of their lives to help us or be with us too - we’re extremely grateful for that. That part alone has been transformative!!

It’s amazing to be able to relax and just let the blessings sink in 🤗 oh and the fact that we’re married now?!? That part is very cool.

Will share photos of the wedding once the photos are developed!!

Brackish foods stretched out some new wings over the weekend.. 🔥
With stellar team @alicjaaa and @patrickfwhite , we wove together an autumnal harvest feast for the wedding of Claire and Michael ❤
I'm only just beginning to land for me how special this was.
Michael with his business partner Sam @plentyvalleyproduce provided all of the produce we had to create this spread, all cooked over open fires. Veggies, lamb, chooks, berries all grown expertly grown on site at location of wedding in the Plenty valley.
We had a disgustingly good time, and so grateful to have been a part of your celebration guys!

Thanks to my recent sourdough adventures I’ve ended up with a lot of sourdough starter discard, so I got experimenting with ways to use it not just in baking, but at dinner time.

This dish was so alive and the taste and colours reflected that. Korean-inspired sourdough discard beetroot pancakes served with beef mince from @muffin_break_’s steer that was butchered over the weekend, and this homemade @maangchi recipe kimchi (the best!!!). Most produce was from @plentyvalleyproduce

How to make the savoury pancakes:
- 2 eggs, beaten
Then add to same bowl:
- 1 small beetroot, finely grated
- 3 spring onions, chopped
- 460g sourdough starter or levain discard
- 100g sparkling/soda water or just plain water with a pinch more bicarb
- dash of honey
- pinch of salt
- 1/2 tsp bicarb soda

Mix & fry into pancakes.

How to make the Korean-inspired beef:
Brown 500g beef mince then add 1 finely chopped onion to same pan. Then add 3-4 spring onions, 4-5 cloves garlic (minced), 2 tbsp soy sauce, big knob of ginger (grated), 1 tbsp honey or sugar, and 1/2 cup bone broth or stock. Once it’s fragrant and cooked through, add chopped kale or another leafy green.

Enjoy!! Thanks to all the people & plants that inspired this.

Note: Could also sub beetroot for carrot in the pancakes.
