What’s really standing in the way of change in school meal programs?

For many nutrition directors, the answer comes down to five major barriers: funding, infrastructure, procurement, staffing, and policy.

On the newest episode of Cafeteria Confessions, Nancy Easton, founder of Wellness in the Schools, takes a closer look at each one, sharing what these challenges look like in real cafeterias and where programs can realistically begin to make progress.

Not every barrier is within a program’s control, but understanding what’s standing in the way can help identify where change is possible.

#TeamWITS is made up of all of our favorite people! 🥰

We kicked off the new school year with two days of training at @brooklynbasketball, good food (courtesy of @billtelepan), inspiring keynote speeches from Alessandro Palumbo and @jennawolfe, and a commitment to YES.

Our team doesn’t wait around, instead we go to the yes, finding communities and partners who are just as passionate as we are about shaping the health and wellness of our children. Here’s to another amazing school year ensuring access to nutritious school meals and active play for students—and to a WITS year of saying “Yes we can!”

Flashback from previous episodes with Nancy Easton.

Nancy’s story begins in Florida, where childhood, fitness, and community shaped the values she would later bring into classrooms.

From becoming aware of social injustice at a young age to building a life rooted in education, Nancy saw early that children need more than lessons to thrive.

Her work through Wellness in the Schools grew from one clear belief: healthy meals, movement, and human connection can change how children learn and live.

Listen to the episode and hear how one simple idea became a movement for healthier schools.

Episode linked in bio and can be found on all podcast platforms.

I need a Shero….

I met @nancy.easton at the tail end of my 40-year career in school food service, and I only mention that because I truly wish I had met her much sooner. @hollierottman, A mutual friend introduced me to Nancy and @wellnessintheschools and from the very beginning, I understood that this was something special.

Over four decades, I had the privilege of being involved in many wellness initiatives. Some were impactful, others well-intentioned, but very few transformed an entire school community the way WITS did. What made Nancy’s work extraordinary was that it never focused solely on food. She understood that true wellness touches every part of a child’s life, nutrition, culinary, movement, education, dignity, culture, and community. WITS created environments where children could thrive, not just eat healthier meals.

Nancy brought people together in a way that inspired action. School staff, families, students, chefs, educators, and advocates all became part of a shared mission to improve the lives of children. That kind of influence cannot be measured only in programs or statistics. It is measured in healthier students, empowered communities, and the lasting belief that children deserve better.

I am honored to call Nancy my friend, and I will forever cherish everything she did to ensure WITS made a meaningful difference in people’s lives. Her leadership, vision, and compassion left an undeniable mark on school wellness efforts across the nation. She more than deserves every bit of recognition that comes her way.

Last night, we gathered for our Spring Dinner to celebrate a true champion for NYC children: Kate MacKenzie.

Kate’s leadership and advocacy have helped advance healthier school meals and expand access to food education for New York City public school students. We were proud to honor her unwavering commitment to ensuring all kids have the nourishment and knowledge they need to thrive.

We’re also deeply grateful to the incredible chefs who prepared a beautiful meal for the evening — and for our Wellness in the Schools chefs who show up every single day for NYC kids with passion, creativity, and care. Their work is at the heart of our mission.

Thank you to everyone who joined us to celebrate the power of healthy food, education, and community.
