An emerging letter of love and reverence to the bread gods from @jake.mattson.bakes & @mvisgil⠀
{first excerpt: soft pretzels} McMinnville, OR

POSTS STORIES REELS TAGGED

VENDOR SPOTLIGHT: @nascent_bread

Our next vendor we would like to thank for being a vendor this year is Nascent Bread. We are so excited!

Here is a little about them by them:

"Nascent Bread, based in McMinnville OR since 2025, is a passion project from co-owners/bakers Michael Visgil and Jake Mattson. Michael and Jake started baking together back in 2016, when they lived nearly 4 hours away from each other. Fast forward to today, as a little luck would have it, both bakers live now 5 minutes apart, and operate out of a cottage baking facility just outside of downtown McMinnville.

Nascent’s foundation relies on core focuses of nourishing community, building purposeful and lasting relationships, constantly exploring fermentation and flavor applications, and having a whole bunch of fun while doing so. The first excerpt of Nascent’s “love letter to the bread gods” centers around sourdough “Philly-style” soft pretzels – marrying Michael’s east-coast roots with a classic Philadelphia pretzel shape and Jake’s west-coast roots with flavors inspired by Portland and Japan. A few of Nascent's namesake pretzel offerings include Furikake (a must with the confit garlic oil!), the Sesame Surprise (mixed flavored sesame & flaky salt), and Old Bay (for the east coasters in the house!).

Over the last year and a half, Michael and Jake have leaned into the serendipity of community support, having unbelievable opportunities to pop-up at a number of amazing breweries and beer-focused establishments. The Bitter Monk and Heater Allen / Gold Dot Beer are considered their homes away from home in McMinnville and have been fixtures in Nascent's slow and steady emergence.

Dear friends beyond their hometown, such as Ruse Brewing, Gigantic Brewing, Fort George Brewery, Grand Fir Brewing, Brujos Brewing, Von Ebert Brewing, Lombard House, the MS Society in Portland, amongst many others, have been truly incredible to work with.

The honor of being a vendor for Breadfest PDX is very humbling and exciting. Make sure to come say hi and live the lye (and maybe try some fun R&D nuggets, too)!

Don't miss out Portland! Save the date!

KÖLSCH PARTY IS THIS SATURDAY.

You could spend your Saturday doing responsible adult things. Mowing a lawn. Going to a hardware store. Finally dealing with that pile of stuff in the garage.

OR you could drink a bunch of Kölsch out of hilariously skinny glasses while a brass band plays.

We vote for that.

This Saturday, August 22, we’re pouring 11 different Kölsch-style beers from Gigantic, 54-40, Chuckanut, Früh, Hetty Alice, Living Häus, Occidental, Oregon City, Rosenstadt, StormBreaker & Zoiglhaus.

$4 gets you a proper Kölsch stange.
$5 gets you a Kölsch.
Another $5 gets you another Kölsch.
You probably understand the system.

🎺 Festival Brass live 1–6pm
🌭 Kölschtastic sausages from Otto’s
🥨 Pretzels from Nascent
🍺 Glasses of crispy beer all damn day

KÖLSCH PARTY IS ONE WEEK AWAY!

Next Saturday, August 22, we’re turning Gigantic into a little slice of Cologne for the return of the Gigantic Kölsch Party!

From 12–7pm, we’ll be pouring 11 incredible Kölsch-style beers from Gigantic, 54-40, Chuckanut, Früh, Hetty Alice, Living Haus, Occidental, Oregon City, Rosenstadt, Stormbreaker, and Zoiglhaus.

Grab your official Kölsch Party stange glass for $4, snag a coaster, and get to work. Pours are $5 for 12oz, and you can order up to five at a time—because standing in line is decidedly un-German.

We’ll have Festival Brass playing live from 1–6pm, plus Kölschtastic sausages from Otto’s and pretzels from Nascent.

Crisp beer. Tiny glasses. Brass music. Sausages. Pretzels. An unreasonable amount of Kölsch.

See you at the Kölsch Party! PROST!

12 long years ago, The Bitter Monk opened on Third Street right in the heart of downtown McMinnville. And 1 year ago, Becky took over ownership of the business! We want to celebrate both, so we hope you're ready for ANNIVERSARY WEEK 2026, starting next Wednesday, 4/29!

We've got a variety of events spread over the week between our 12th and 1st anniversary, celebrating our past, our current, and our future. Come for one day, or show up for them all! We will be handing out raffle tickets for each day that you come in during anniversary week, so you can get up to 9 chances to win a prize at the end.

Stay tuned for specific details for each of the events of our anniversary week, but we're so excited to celebrate with you! Cheers to 12 years!
