Pepper Lunch at home!
Eggs are not in a standard recipe but they always find their way into mine!! 💭Why not💭

Secret’s in the glorious Honey Soy Sauce Inspired by @nomadetteats
1/2 cup Light Soy Sauce
1/2 cup Honey
1 Onion - minced
2 Garlic cloves - minced
Cornstarch slurry

Don’t forget as much black pepper as you can handle! That is the gist of the dish (well… and butter!!)
Tip ~ I added juice from one lime in my recipe for a tinge of zest! The subtle lift will elevate this one pot meal!

Hainanese chicken rice.
A dish that @ironpochacco and I collaborated to make. I brined the chicken. He poached the chicken for which I used the poaching liquid to cook the rice. I made the chili sauce (spicy and yummy!) and ginger sauce. I cooked the veggies (gai lan).

Post-Singapore trip craving satisfied 😋

Nasi lemak and ayam goreng! I wish there were more Malaysian or Singaporean spots close by.

Coconut rice cooked with pandan leaves, sambal, fried ikan bilis/peanuts, and chicken coated with a craggly spiced batter (fennel, cardamom, cumin, turmeric, galangal, lemongrass, shallots, garlic & ginger).

🦐 My absolute favorite Dim Sum dish is Shrimp Cheung Fun, but it's a huge pain to make. Rice paper hacks for the win!

I think this can be marked off as a perfect day! Breakfast at @dishoom followed by a wander round the portrait gallery. We managed to get to see Prima Facie for a matinee (Jodie Comer is incredible) and then a cupboard staple dinner with gochujang buttered noodles.

Move over smashed burger, time for smashed chicken.

Ayam penyet is Indonesian style fried chicken - “penyet” literally means smashed because once the chicken comes hot and crispy out of the fryer, you flatten it with a pestle. That way all the crunchy bits crack, and you can slather the sambal on.

Had some leftover sambal I wanted to use up, recipe for the chicken from @nomadetteats 🥰

Paella starts with the rice. 🌾🥘
We use Bomba rice—small, mighty grains that soak up every drop of saffron, paprika, and rich broth. Cooked in a thin layer for that perfect bite and crispy socarrat at the bottom. In Spain, we say paella is all about patience… and it starts with respecting the rice. 💛

Gochujang buttered pasta:

Was after something rapid, with few ingredients (all of which I luckily had in cupboards) and this really packs a punch. Super flavourful and not too spicy (the gochujang is balanced out with rice vinegar, honey and, of course, butter!). Also, spirali is an elite pasta shape.
