Thursday 19 November is Beaujolais Day, and we’re celebrating with four courses of French cooking from Chef Mark, four drinks from Dave & the gang and a proper evening of it 🎯

We’ll be raising (and drinking) a glass to Beaujolais Nouveau, the first wine of the new vintage, alongside more Beaujolais and a couple of French-inspired cocktails. What more do you need? “Absolument” 👌

great day’s cooking for @restauranttour_uk, over 270 guests through for some Sunday lunch.

Our meat based offering for today was the Whole Duck Taco. Legs salted and confit before frying a second time to make Carnitas, breasts slowly cooked and finished over the coals, pickle and prickle, Prickly Pear and Pickled Shallot.

Always great fun making new dishes but also having the chance to showcase the venue in one dish, show technique and thought whilst also making things approachable and of course, absolutely delicious 👌👌

A rather lovely month prepping for what is about to be a rather crazy few months…

@proloco.mcr is a restaurant built around Rich’s longstanding relationships with some of the country’s best producers. So, in the build-up to launch, we worked with @acre.film to capture the stories behind a few of them. Great stories and great pizza coming in August!

We taste al pastor, and oysters, and tuna tostadas, and guacamole, and birria, and margaritas, and salsa, and barbacoa, and a whole bunch of other things, every day, just to make sure it’s right, for who.
Somebody’s gotta do it, and we’re thankful you continue to let it be us ❤️🙏🌮

to round out our Elevated Madre’s Table at the beginning of this week…

@swaledalebutchers Beef Short Rib, cooked for 12 hours in ancho chile, burnt grapefruit and a whole lotta love. Served alongside Pepita Romesco, all fire roasted and hand chooped. A simple sauce of the braising liquor and some Cremma Fresca.

Beautifully simple on the plate but a rollercoaster on the palate.

I’ll have a new one for the weekend so come see us for a darn good time xxx

banging wee special to start the week @thisismadre Leeds!

in the interests of zero wastage and, of course, every ingredient being delicious when given the right love! Smoked Corn + Octopus Croquettes.

Working with beautiful, whole Octopus from @midlandfishco, means each time we go to prep the hands we’re left with the entirely usable heads. So we treated them with same love as the hands, seared in the fire and confit in Pork Fat + Guajillo Chiles 😮‍💨😮‍💨

Each service when we have tortillas left we’ve been leaving them above the fire to dehydrate, once they’re dry you can blend to what is essentially Masa Harina again.

Using this flour as a starch for a béchamel, adding some extra smoked and dried corn, as well as our confit octopus we’ve made our own riff on classic Takoyaki :) finished with our house Cola BBQ sauce and some Cremma Fresca, these are a taste sensation 👌👌
