Blended vegetable soup

Verdict: A great way to increase your vegetable intake. Like i do using my subscription from @oddboxldn

This is a smooth, golden soup with herbs and spices.

Blended soups can be a particularly convenient way to eat vegetables if you dislike chunky textures.

You could make it with carrots, sweet potato, ginger, garlic and a suitable broth.

My tip: Add a protein source alongside it, such as eggs or freshly cooked chicken, to make it a more substantial meal.

Your green and golden vegetable soup

Verdict: Another nutritious option.

This soup is full of a variety of vegetables- i get a weekly delivery from @oddboxldn so i throw in all kinds.

Blending the vegetables doesn’t remove all their nutritional benefits, and keeping the fibre in the soup is useful for digestive health.

You can also add sweet potato or white potato to thicken it naturally.

Diving into a Greek Odysea with this delicious aubergine imam from @odysea_ltd’s new cookbook. The perfect recipe for my @oddboxldn delivery. There’s nothing odd about the wonderful array of fruits and veggies in this box! 🍊🥝🥭🍆🍠🥬🍳🥖

Slice through the purple skin, fry in olive oil until softened, then bake in a rich tomato sauce. I couldn’t resist adding cumin, cinnamon and chilli to this lovely simple dish.

ODDMAXXING 🍆🍑
Dream partnerships don’t happen often, but when @hoodares collaborated with @oddboxldn on their latest campaign, the outcome could only lean one way: weird, wonderful and slightly odd.

It was an absolute joy to steer the art direction for ‘An Ode To Oddity’ and get hands-on with all aspects of the TVC, including holding up a giant aubergine. Available for deep squats and lunges.

Big love to everyone who helped bring this to life:

Strange arrival in this week's @oddboxldn - they look like skinny parsnips but are colourless carrots 🥕

Reminds me of Turkish lessons in #Istanbul where I told me teacher I'd eaten parsnips but he didn't know what one is...turns out the Turks don't have a word for parsnips ‼️
