EL SALVADOR & INDIA

Two new coffees for you this week. Los Nogales from El Salvador returns for a fourth year, and Kerehaklu, India makes its debut.

Precise processing, incredible environmentalism on the most amazing biodiverse farms, and ever improving quality are just three reasons to watch India as an emerging specialty. We've chosen a washed lot that shows off Pranoy's modern approach to processing. We're tasting loads of tangy orange acidity, black tea florals and a creamy, burnt sugar note reminding us of crème brûlée!

Meanwhile, Los Nogales is tasting as sweet and comforting as ever. This natural lot presents with lots of dark berries and moreish chocolate and nut notes. A lovely smooth mouthfeel rounds out the cup. Buying some of the same coffees year on year enables us to build on relationships as we grow, and provides a reassuring seasonality to our offering.

L’automne s’achève🍂… et les nouveautés apparaissent. Nous avons reçu de nouvelles bines de la région de Tabasco au Mexique via @ositocoffee et c’est un plaisir de les découvrir. Voilà notre première palette au lait végétal. L’Horchata est ce breuvage mexicain élaboré à base de lait de riz mais nous avons opté pour l’Horchata de chufa, une version espagnole de la région de Valence. Le chufa (noix tigrée) n’est ni une noix ni une graine : c’est un petit tubercule naturellement sucré, sans gluten et sans lactose qui bénéficie de l’Appellation d’Origine València. @tigerandbean transforme ce super aliment en une poudre caramélisée sous forme de « milk crumb ». Nous sommes aussi très fiers de l’illustration de @romain_blais 💀 #delabinealapalette #beantobarchocolate #monttremblant #horchatadechufa

Ethiopia is coffee’s “source code” — all other coffee varieties are an iteration on the original.

A recent trip to MASS MoCA had us re-inspired by Sol LeWitt, who wrote instructions for others to create.

This washed coffee from Mensur Abahika in Jimma is pared down to its essence — like LeWitt’s work — leaving notes of peach, black tea and honeysuckle.

🩵 Koromii - Ethiopia - Natural 🩵

Sookoo was founded in 2018 by Ture Waji, who spent years managing production across Guji before he could export under his own name. Sookoo means gold, and it fits. Alongside great coffee, they run pre-harvest lending, agronomy training, and a woman-first hiring policy at their stations.

Seven harvests later, what excites us most about Koromii isn’t only the flavours (which are brilliant, every single year). It’s the planning together, and the trust that holds.

Perennials are a thing in nature and also on our menu. Each year we look forward to tasting fresh crop Shoondhisa because it’s (still) really good. 👌🏻Gingerbread, strawberry and jasmine makeup the mainline notes. Link above for more info!

Meet Gundikhan — the first Indian coffee to join the Manhattan lineup! 🇮🇳

Many of you have asked us to bring Indian coffee to Manhattan, but for a long time, we couldn’t find the right coffee to start with. That changed this year, when we tried a lot from Gundikhan Estate and knew we’d found the one.

This yeast-fermented washed coffee combines the crisp freshness of green apple with the gentle sweetness of brown sugar, complemented by the citrusy spice of black lime (loumi) and a rich, syrupy finish that lingers on the palate.

Available in both espresso and filter roasts.

🇮🇳 Indian coffee joins the Manhattan lineup for the first time!

Many of you have asked us to bring Indian coffee to Manhattan. For a long time, we couldn’t find the right coffee to start with. But this year, we tried a lot from Gundikhan Estate and knew we’d found the one.

That’s why we wanted to dedicate this post to the producer behind this coffee and the story of his farm.

🌿 Meet Gundikhan Estate

Located at 1,300–1,400 masl in Karnataka’s Chikmagalur district, Gundikhan Estate is part of the Kaad Kaapi collective, a group of producers committed to both specialty coffee and wildlife conservation.

Producer Saif Ulla focuses on careful processing, preserving native tree diversity, and growing coffee in harmony with the surrounding ecosystem.

🐘 Coffee and wildlife, side by side

The farm is home to elephants, tigers, Indian gaurs, and a rich variety of birdlife. Protecting this biodiversity requires maintaining a dense tree canopy, which comes with significant costs and can reduce coffee yields. Wildlife can also damage coffee plants.

Kaad Kaapi producers help make this approach possible by focusing on high-quality specialty coffee that commands premium prices. In this way, coffee becomes more than a crop — it helps support farming practices that protect native wildlife and preserve biodiversity.

We’re proud to share this coffee with you and hope you’ll enjoy discovering its story as much as we have. ☕️

Oaxaca is back in the line-up 🇲🇽🙌🏻 This washed Mundo Novo from Apolinar Hernández epitomizes approachability. It’s like a warm welcome but in a cup - crisp, clean and balanced.

Two coffees, best tried side by side! Gundikhan Estate sits in India’s Western Ghat mountain range, where producer Saif Ulla grows exceptional coffee under dense shade while working to protect the biodiversity that surrounds it.

This year, we’re sharing two expressions of Gundikhan: Natural + Washed. Same place, same producer, two different processes and two distinctly delicious cups.

INTERNATIONAL COFFEE DAY ☕️ 🌎 🌍 🌏
From the beginning, through every era and every menu change it has always been about the coffee. The world of coffee is enormous but feels so small after all these years, we have been able to connect with some amazing people and build lasting friendships.

Our focus on coffee won’t ever leave. Every year make it a goal to improve our offerings as we push forward. We have had the privilege to work with some great roasters to share with our local community and of course cultivate our own offering menu of coffees. Thanks for coming along and tasting all our coffees in the shop or in your home. Also, shoutout to some of the community we have built in the world of coffee.
