While @mahnazdamania and the NYC crew held it down… I was shucking around in Rockland, Maine 🦞🦪
Made my way up to the @mainelobsterfest with @jolie_rogers_ — shucking alongside @_andy_rogers is always a treat. This year, we served up some Cora Cressy oysters (Madomic River), @pemaquidoysters (Damariscotta River), and Wet Smacks (@maineoceanfarm, Freeport) 🔥

Made some new friends go check them out - @touchofgreenfoods and @newks_hot_sauce (psst…picked something special for NYC pop-ups)

We threw in tomato salad, halibut ceviche, and shrimp rolls for good measure. A feast, a proper vibe, and five days in the chillest little town with the most fun folks (thank you - Andy, Ryan, Nina, Esther)

Also… we got ourselves a new shucker — @ninabean116 is officially part of the shucking crew! “The Wet Smack Pro” 😮‍💨👏

Year two at this fest and already can’t wait for the next. 🙌

The last step of oyster tasting is to flip the shell over to admire the collaboration between nature and nurture. You can actually tell quite a lot about the oyster from its shell: what species it is, what type of environment it grows in, what predators it must endure, how it was cultured, and how easy or difficult life has been.

At @oystermasterguild we are developing a robust structured approach to tasting and evaluating oysters, which aims to address appreciation and assessment needs. It will be shared during the upcoming Oyster Appreciation Fundamentals Course.

We still have a handful of openings left for the course. If you want to be the first to take it, along with our 80+ students from 9 countries, you can learn more at oystermasterguild dot com.

Love the upcycling collabs that @huitres_geay_family are doing! They also upcycle old oyster mesh bags into restaurant bread baskets. 👍

These young, prim and proper Norumbegas grown by Eric Peters from Newcastle, ME from my local Oyster CSA were a delight to open and enjoy for breakfast 🥰 (Yes, I like to eat oysters for breakfast.)

The shells are clean, sturdy, and nicely shaped—making them perfect for beginners! Flavor-wise, they're pretty simple and straightforward. High in brine, moderate minerality, with a hint of daikon and celery. Clean and crisp finish. Maine oysters are just beginning to feed again after a cold winter/spring, so I'd expect them to increase in sweetness and savoriness as the next few weeks go by. I'm looking forward to hearing what my fellow oyster lovers have to say about these oysters tonight at our virtual tasting club meeting!

Next Wednesday will be the last in-person NY Oyster Tasting Club event of the season at @congressbarbrooklyn but @worldsyouroysterco will continue doing pop-ups there! Also, I think there's still time to sign-up to join the Oyster CSA for May & June! If you're interested in attending the tasting club meeting, sign up at https://oyster.guru/nyoysterclub 👍 RSVPs close this Sunday.

Consider the oyster on this World Oceans Day.

No other food tastes of our origin, our beginning quite like an oyster. No other food has captivated the hearts and minds of so many people from around the world. And much of that taste and culture is influenced by the ocean. We owe it to our planet, future generations, and ourselves right now to preserve, protect and improve it.

For me, that means:

1) Educating oyster lovers about its sustainability and sensitivity to changing climate (see @shellfish4climate)

2) Supporting responsibly-farmed seaweed, shellfish and finfish, for great physical and mental health (see @seafood4health)

3) Promoting a diverse community of oyster enthusiasts, advocates and experts are raising the raw bar experience (see @oystermasterguild @oystersouth_ @seafood_and_gender_equality)

This is an ongoing practice that takes collaboration, teamwork and tolerance. What do you envision for our oyster future?
