hamachi, jaggery, flying fish roe

mushrooms, mushroom ganache, lumpia tartlet

W: La Mesa Honey Mead
Funk of buah keluak mixed with savory chicken liver kaya demands a bev w/ inherent weight. Provides a rich opening act.

salt baked beets, almond milk, horseradish, scallops

W: Billaud-Simon Chablis Tete d’Or 2022
Chalky minerality, focused green-apple acidity of this wine slices through this dish.

—
maine lobster hebi hiam, fermented jalapeno

W: Evinate Taganan
White wines get destroyed by heavy spice, Táganan is grown on volcanic cliffs and undergoes light skin-contact, rounding of the notes.

—
ginger flower, skipjack tuna, passion fruit

W: Les Amandiers de La Liquire Rose
Skipjack is an oily, iron-rich fish that makes white wines taste metallic. This rosé has a structured blend of Mourvèdre Grenache complimenting its rich flavors.

black chicken soup, buah kulim, coconut

W: Ballot-Millot Puligny Montrachet 2023
Buah kulim is a powerhouse of jungle garlic and deep, forest-truffle aromas. Puligny-Montrachet is a match on earth for truffles.

striploin, smoke, pickled cabbage, somen, kare kare

W: Bouchard Beaune du Chateau 1er Cru Rouge 2022
High-tannin red wines would turn violently metallic against this dish but this Cru Pinot is high in acid and very low in tannin. Berry flavors act like a fruit jam, while spicy oak notes embrace the char.

fish roe rice and smoked fish soy

duck breast, duck rendang and achar

W: Nito Banzai Sake
Red wine tannins clash with fish roe and smoked soy. Dry wines get stripped by the fiery XO sauce, drowned by the thick cream of the duck rendang. Sake has zero iron, protecting the delicate crab and fish roe.

starfruit, barley, bird nest

mango, algae & roselle, seaweed

W: Care Brut
Care Brut’s green apple and citrus notes lift the starfruit, while its salinity acts like a squeeze of lime juice over notes of the algae and seaweed.

Eight months in we revisited @restaurantcelera with its seductive interiors brilliantly designed by @jj.acuna I was so happy to bring our friend @ramonatlarge visiting from NYC to the space as we both love good food and excellent conversations. Joining us were my favourite people @pambegre & @geronimo_begre who I consider family. The evening was everything and more. We lucked out that there was no traffic heading to @comuna.ph . After showing Ramon around the creative hub we hunkered down to dinner. The meal was a narrative on Chef’s @niccosantos childhood and life. A personal essay on his memories on food and where he is now. Like all stories there are always those that have a connection to you. What resonated with me were the creative snacks that started the meal each one so interesting and rich. The standout was the beef tartare tart that was just divine. I also loved the “adult oreo” which was made from duck liver mousse accented with local goat cheese wedged between honey tulles then topped of with decadent caviar. I mean….This dish alone is worth the visit to Celera! The magic did not stop there as Nico’s squab/pigeon dish was absolutely delicious. The bird was prepared two ways and both complimented each so well it was like fabulous Jazz playing in my palette. I am just so happy and proud that we have this kind of creative cuisine in our city. Mabuhay kayo Nico and Queenie! I pray that your tribe increases and prosper. ❤️❤️❤️

Last Sunday, I had the privilege to welcome faces, new and old, for a day of Yoga, Sound, and BarrexPilates (+ drinks & beats). My weekends in London used to be filled with free recreational activities within reach. Out of frustration for not having enough of these in Manila, I decided to bring this missing piece to my home. It all felt blissful and heartwarming bringing something fresh to the community. Biggest thanks to @pambegre for helping our vision come alive in your lush space. And of course my friends for making the day complete @ninadefensor @pamelamaia.wellness

Thank you thank you to all those who came (including the ones not pictured) 💕💕 Here’s to more days of holding space @mesy.club It fills my cup bringing people together doing something that I love. 🌿🧘‍♀️ (& peep that soft launch)

In the quiet beauty of Parallel Luxury Villas, love found its stage. We built something sculptural, personal, and overflowing with love.

Every bloom, every curve of moss, every handwritten vow was woven together to frame a question that changes everything.

This wasn’t just styling—it was a love story told in flowers.

Here’s to proposals as unforgettable as the love they celebrate.
