Spinach, chickpea and paneer curry 😍

Do you ever fancy a vegetarian meal after meat-heavy dinners? You need to give this vegetable curry recipe a go ⬇️

INGREDIENTS (4 people):
- 2 tins of chickpeas
- 30g of lentils
- 50g of spinach
- 500g of curry sauce of your choice
- 1 pepper
- 1 onion
- 1 tsp of cumin for paneer
- 1 tsp of curry powder
- 1/2 tsp of chilli flakes
- 1 tsp of lazy garlic
- rice

METHOD:
✨Dice up the paneer and add the chilli flakes, cumin and curry powder to a bowl and toss to combine.

✨ Add to a frying pan and fry on low until brown and crispy. Transfer back to a separate bowl to add later.

✨ Chop up the pepper and onion, and add to the frying pan, and cook for a couple of minutes until soft. Then add the lazy garlic.

✨ Add chickpeas and 1 tsp of curry powder and cumin and mix together.

✨Cook lentils according to the instructions and add them to the pan along with the curry sauce. If you’re running short on time then a jar mix does the perfect job! I used a tikka masala from @pataksuk because they’re soo nice 😍

✨ Place the spinach into the pan and add a lid to help it wilt down.

✨ Once the spinach has wilted, give it a final stir and serve up with some flurry rice and naan breads!

SLOW COOKER BIRYANI STYLE BUTTER CHICKEN 🍛

If butter chicken and biryani had a baby, this would be it!

Tender chicken, fluffy rice and all those lovely curry flavours, cooked together in the slow cooker. No boiling rice separately and hardly any washing up. My kind of dinner!

Perfect for those busy days when you want something comforting without spending all evening in the kitchen.
