Tonight’s Les Dames NOLA panel, “Serving Up Unreasonable Hospitality in New Orleans,” was a beautiful reminder of why I love this industry. The connections, the thoughtful details, and the opportunity to make people feel seen and welcomed.

We even received a welcome from Will Guidara himself, author of Unreasonable Hospitality, making the evening even more special!

Another Michelin Guide ceremony is in the books!

It was just Carlo and I who traveled to Nashville but we carried our Kamayan family and our community in our hearts. 🇵🇭

No matter how many accolades or nominations we receive, at the end of the day, we’re just an auntie and uncle who fiercely love our beloved Philippines and our kababayan(s).

We are the keepers of traditions.
It’s a humbling role and we are grateful and fortunate we get to do it every day.

More than the distinctions, it’s the respect and camaraderie with our fellow chefs that we value the most.

Among us, there is no competition—and that’s the true mark of a chef.

We are all here in Nashville to root for and celebrate each other, fully understanding what we all go through and knowing that we have each other.

We head back to Atlanta with full hearts, and we can’t wait to cook our 💜 out for y’all!

Only one thing went wrong in NOLA:

I had been looking forward to my previous (admittedly touristy) birthday lunch plans for months, but it was a GD disaster. After a 45 minute wait — because they don’t do resys — we were seated.

The courtyard area was so beautiful… Great gowns, beautiful gowns. But they were out of EVERYTHING we wanted to order and unwilling to make tiny modifications to menu items to account for that. It was only like 1:45pm and no, it wasn’t a Jamaican restaurant — which is the only time when that is perfectly fine and I accept my fate.

It was so bad that we were all on Google Maps immediately to find a Plan A, B, C or D. One of the places I called was @pechenola. Shout-out to the baddie (he/him) that was working the host stand that day.

They were pretty booked, but somehow his sixth sense kicked in. Maybe he heard the thinly veiled mental anguish in my voice? He said that he could squeeze us in at 2:15pm.

I ran it like a military operation. I delegated one officer to call the Uber, another to tell them to nix our pitiful order, another to secure our to-go drinks. 🩸 They were famous and Instagrammable, and the only thing good about that place and its sister restaurant, I fear…

We made it to Pêche on time and had a marvelous time — so good that we agreed that maybe God or the Universe or whomever intentionally made the first place janky to make sure we crossed this off our NOLA list this weekend. You know, the delicate hoodoo of it all.

All I’ll say is this: I got mad as hell eating there because local residents get to hang there all the time, and we had to go home. Maybe that’s a good thing, because if I lived in NOLA, I’d be overly in there.

Thank y’all for SAVING my birthday and for being sweet enough to bring us bubbles at the end, too. 💌

What a long, strange shift! 🌹⚡️💀

Last weekend, we had the incredible opportunity to partner with @lexususa and @southernsmokefoundation in Houston to raise money for the people who make our industry so special. And with a Grateful Dead theme, you know we felt right at home!

Together, we raised $2 million to support Southern Smoke’s mission of caring for the people who keep our industry moving.

We brought our Monteverde Pastificio to life in Houston, serving our beloved Burrata e Ham and Chef Sarah’s favorite spuntino—Parmigiano Reggiano with 12- and 25-year-aged balsamic from Acetaia San Giacomo. We hand-rolled 800 tigelle and served Parm straight from the whole wheel!

A huge thank you to @framani, @euromid, @internationalgourmetfoods, and @sysco for generously donating and sourcing such beautiful ingredients.

Throughout the year, we’re asked to support many wonderful causes, but Southern Smoke is one we choose to stand behind year after year. Their mission supports the people who keep our industry moving—from chefs and servers to farmers and delivery drivers—through crisis relief grants and access to mental healthcare.

Their Behind You program provides no-cost mental health counseling to hospitality workers, including our teams right here in Illinois! The program is now in 12 states and counting.

We believe taking care of the people who take care of others is one of the most important things we can do.

Thank you to the entire Southern Smoke family, our fellow chefs, volunteers, and everyone who came out to support this incredible cause.

Was an absolute joy to to attend @southboundfoodfest in Birmingham with dear friends! What a thriving food culture and festival Birmingham has developed.

These are photos from Pepper Place Market and Southbound’s Food & Fire event at @sloss_furnaces , featuring talented chefs from across the South. Have I mentioned lately how much I love living in this region?

Grateful to @maryclaytoncarl and @masonplusdixon for hosting our little trio and to @thekerilane @cathy_slossjones @leighviv and many others for producing such a unique festival! I left feeling stuffed with incredible food and fun moments.
