As someone who is deeply passionate about strengthening the ties between France and Australia, I’m particularly proud to see Melbourne hosting the 2026 French-Australian Excellence Awards at St Kilda Town Hall on 5 November in the presence of our French Ambassador @david_martinon and our Consule Générale @pauleignatio. After three years in Sydney and two years in Canberra. I am thrilled to help organise this event with Le Courrier Australien - LCANews, right here, in my town hall.

From Strasbourg to Le Meurice in Paris, where he learned his craft alongside Cédric Grolet and Maxime Frédéric.

Then Sydney: the InterContinental, and Head Pastry Chef at the Four Seasons. Australian Pastry Chef of the Year 2022, French-Australian Excellence Award 2024, and since 2024 his own house, Qollection Patisserie.

On Thursday 22 October, he creates one of the two desserts of Château Merveilles: a French whisky baba with Michel Couvreur whisky, fresh citrus, pink grapefruit sorbet and vanilla chantilly, under walls that come alive across more than 3,500 sqm of projection.

At 19, he walked into Joël Robuchon’s kitchen in Paris. « He was the chef of the century. He taught me everything. »

Then Sydney: Quay, and twelve years at the Opera House with Guillaume at Bennelong, three chef’s hats. Bistro Guillaume in Melbourne. Chevalier de l’Ordre national du Mérite. GQ Chef of the Year.
