POSTS STORIES REELS TAGGED

The best parts of hospitality are the relationships.

Raf has been in our corner since our North Melbourne days, always generous with his time, knowledge and perspective. He’s one of the people we trust most when it comes to wine, and every catch-up leaves us inspired (and usually with a much longer wishlist).

Here’s a little behind the scenes from one of our tastings together for @giorgiodemaria_fun_wines most recent shipment of @massa_vecchia_wine . Thanks for always looking after us, Raf. 🤍

ALERT NEW PRODUCER
Domaine La Mutine is based in Island in the Vézelay area of northern Burgundy, a quieter, raw corner of the region. Founded in 2022 by Jean-Paul Pando after experience in Provence, Margaux and Meursault with Jean-Marc Roulot, it reflects a deliberate break from convention. Farming 2.5 hectares organically, he works entirely by hand on limestone soils, crafting wines of precision, salinity and freshness. Frost has pushed him to complement production with carefully sourced négociant fruit, always from Burgundy and with a preference for the northern part. In the cellar, minimal intervention, spontaneous fermentations and mainly stainless steel preserve purity, while a small reserve kept on lees allows subtle blending to add depth and texture when needed

Domaine Les Cailloux du Paradis, in the Loire Valley, spans 20 hectares, with only six under vines, the rest farmed as a natural ecosystem. Founded by organic pioneer Claude Courtois, the estate embraces remarkable grape diversity. Today, his sons continue the story, with Etienne leading the domaine, balancing tradition and freshness through thoughtful winemaking and evolving cellar practices.

#2016 What a transformative decade. 2016 was the year that completely changed my career trajectory and I wouldn't have it any other way.

My world before hospitality was a world of fashion events, marketing and visual merch.
1) In 2016 I dined at a restaurant that changed it all and inspired me to shift career lanes. That restaurant was @restaurantfrantzen (at the time a small 2 star in old town) completely change how I imagine what fine dining could be. Truly amazing what the team have accomplished in the years since.
2) Came back to AUS and was lucky enough to start work with @petergunn501 and IDES. Forever grateful for the formative years
3) I even did 3 months in the kitchen to see how fine dining kitchens run. Was in the pea podding section a lot 😂
4) Event season working for en pointe events with the wonderful @therealroccotrimboli
5) @restaurantmirazur x @idesmelbourne collab for world 50 best 2017
6) A decade of runsheets
7) Lots of Hong Kong trips to see this crew @j.chinois @sebastiantrobinson
8) My favourite time learning from and working with @katie_shiff @lotuslandagency on all things PR
9) A large scale event I ran and organised for @broadsheet_melb
10) Praying for a Mirazur win (50 best, 2019)
11) 2019 @theworlds50best awards I attended
12) Gaggan on closing night with some incredible friends
13) Backstage at a event with Joan Roca @cellercanroca
14) Writing copy and comms for the Frantzén group
15) First new years with @societyrestaurant @loic_avril popping the first bottle
16) @melbfoodandwine 30 under 30 celebration gala
17) Taking on the role of Head of Events for Society
18) The pleasure of working with the @theritzlondon

Just a few highlights from a jam packed decade. A decade that made me fall in love with the world of fine dining and hospitality.

Salima and Alain met as students in Montpellier, before an unexpected chance to reclaim Alain’s family vines reshaped their path. They returned to Noé-les-Mallets in the Côte des Bar to restore four hectares of Pinot Noir and Chardonnay.

Set on high, limestone-rich slopes, their vineyards define the estate’s identity. Farmed organically with cover crops and low yields their vineyards lie among finger-like ridges that climb to the highest sites in Champagne; soils are dominated by Portlandian limestone and kimmeridgram calcareous marl - dense, chalk-rich and reminiscent of Chablis—making altitude and geology central to the identity of the estate.

Every wine is vintage-only, aged for at least five years on lees, finished without dosage and bottled with a prise de mousse started from fermenting wine rather than MCR.

Thanks again to @pitbeat aka Raffaele Mastrovincenzo for reviewing ITO, and for consistently supporting the CAPStone trilogy.

I discussed the CAPStone project a few months back with Raf when Plague and I were about to release Houses. Check out Raf's Substack for the full interview.

We miss you Alain. ❤️❤️❤️

2022, the final vintage of Les Vins du Cabanon, arrived in Australia in September 2023, and until now I hadn’t found the courage to release the wines.

Today, with deep emotion but also happiness, I am finally ready to share them with you. And if you choose to bring a bottle home, giving it a little extra time to rest will make opening it even more meaningful.

I first met Alain around 2012, catching him in the middle of harvest in his tiny cellar in Banyuls-sur-Mer. Over the years I drank countless bottles of his magical Casot de Mailloles wines, but it wasn’t until May 2018 — when I visited him at his cellar in Fourques - that we started to work together - also, a special thanks to Manuel @vinyerdelaruca for helping me. Alain’s gentleness struck me immediately and - with the exception for the period when the world stopped - I visited every year since.

The wines will be available mainly for wholesale. We did, however, load four six-packs on our website for the public, as I would love for the wines to spread as much as possible.

CIDER MASTERCLASS!!

Please join us on Tuesday the 25/11/25 for a tasting and masterclass on one of our very favourite topics, artisanal cider.

We’ll be joined by one of the great scholars of the Australian beverage industry, farmer, brewer and winemaker Ashley Huntington of Derwent Valley brewery Two Metre Tall, whose own fascination with fermented fruit rivals that of anyone we know.

Founders of one of the most ambitious projects in the contemporary Australian beverage landscape, Ashley and Jane Huntington brew wild beer and make cider on their farm west of Hobart and today bottle beer from a solera system that is not only decades in the making but of international significance.

As highly vocal and enthusiastic promoters of wild fermentation, Ashley and Jane have long shared our great passion for wines made fruit other than grapes and it will be our enormous pleasure to have Ashley at Public to share many years worth of stories and experiences of agriculture and fermentation.

On the evening we’ll be tasting through a range of ciders from some of the most astute producers in France, Spain, Switzerland, The United States and, of course, Australia and discussing the influence of soil, climate, culture and the human element of arguably our favourite gastronomic beverage.

For anyone interested in the limitless topic of fermentation, this will be a highly valuable opportunity to meet one of the most entertaining minds in Australian beer, cider and wine - very happily pictured above this week, at home home with a young Frequin Rouge Amer tree, the fruits of which will be appearing in your glass in years to come!

As always, snacks will be provided by the kitchen team.
