Good times at Papa’s Pizza Place in Woodridge. Enjoyed the crunch on the cracker thin crust. The sausage was quality. My main issue was the sauce needs something more going on. Currently it’s unfortunately too much on the blander side imo.

If they got the sauce dialed in, look out, a top level contender. As it currently stands, I’d give them a B strictly because the sauce holds them back/sort of disappoints how close they are to something special. Solid neighborhood spot that could jump to elite with a tweak or two. The ring to Papa’s Pizza Palace would also be a sweet upgrade. Food opinions for days over here. Can’t stop, won’t stop.

Recently went to @floandsantos with Justin from @pizzaclubchicago

Good times, Flo & Santos was solid as always. Nice talking with a fellow thin crust enthusiast that’s been exploring the Chicago pizza scene as part of a pizza club that does pizza reviews since 2011 (wow).

Like what they have going on at Flo crust-wise, and the quality sausage. Super thin with a nice crunch (a tad thicker than Pat’s). Only adjustment would be to have a bit more sauce, and to add something to the sauce to make the flavor stand out more. Solid neighborhood spot that I enjoyed during my brief few years living in the South Loop.

Damn. @foxspizzaop in Orland gets it. Excellent. No notes. 🔥 Awesome crunch to chew ratio. Right amount of fennel in the sausage (not beating you over the head like the Beverly location unfortunately does with aniseed/black licorice flavoring you to def). Hitting on all cylinders. An iconic Chicago pizza.

Chester’s Tavern (with Orsi’s Pizza) in Summit.

Quality fennel packed sausage has to do the heavy lifting for this pizza. The sauce could use something to capture your attention, and the crust kinda has that dried out consistency where you’d like more chew to it. The cheese blend was unique (a bit of an odd flavor), not feeling it. It’s an average neighborhood pizza joint but nothing I’d seek out again. Normally I’d order it my preferred easy well done, but I’m checking what standard these spots like to cook their pizza to.

The place left me thinking, where do people find the cash to burn on slot machines in this economy.

The King of the Crown. Three kinds of mozzarella, garlic, oregano. Finished with burrata, fresh basil, pecorino romano, fancy salt, and fancy olive oil. And if we're lucky, that crispy cheese crown. This is our Tribute to Justin DeLeon and Apollonia's, on Wilshire and now on Crenshaw. I'm making this one at Pizza City Fest LA, next Saturday, April 25th. Which, yes, means I'm showing up in his city, doing his pizza, at the festival where his square pulls the longest line every year. Bold move, let's see how that works out for you, Chef...

Over the next year or so, I’ll be ranking Chicago thin crust sausage pizza around town (with a few specialty pizzas & a little burbs action thrown in for fun). Top 10 favorite list TBD.

First up, a heavy hitter, Pat’s in Lincoln Park. Famous for a reason. Nice sauce, and cheese blend. Crazy thin pizza, intentionally the thickness of 8 sheets of paper. Satisfying crunch.

Only thing to improve it would to upgrade the sausage a tad (it’s solid imo but could be excellent ).

Hit me up with recommendations if you’d like to. My try list is long.
