Reading about khatte baingan, a tangy Kashmiri brinjal curry in chapter twelve made my mouth water. The writer described preparing it in her Punjabi household only to have it declared “unacceptable.” I served the silky curry atop mini laccha parathas with pickled onions for crunch.

Kolkata’s street food has always fascinated me, so ghugni was an easy choice for the street food course-mashed potatoes, ragda, imli water, mudi masala, fresh ginger and coriander to finish it off.

Dish no. 5!This dish was inspired by paintings we all did in our childhood that relied on the immiscibility of oil and water. To recreate that magic, I dripped two types of oil into a chilled cucumber broth🥒

A high-hydration flatbread that puffs up like a cloud felt like the perfect vessel to capture the warmth of a dawat-friends gathered around one plate, tearing and sharing. I present to you a middle eastern flatbread!

Nibbling in the kitchen is something that all of us do, especially while cooking-makhana with chilli oil or chakri with aachaar. This led to the creation of this Thecha cracker

Growing up in a vegetarian, health-conscious family where food was everything, I developed a soft spot for the “underdog” vegetables-pumpkin, green tomatoes, kohlrabi, the ones others overlook. My first original dish was born from pumpkin, and it remains my favourite. Naturally, it earned a spot on this menu: a South Indian inspired golden pumpkin croquette!

Living alone and working 9-hour shifts in the kitchen left me exhausted. By the end of the day, I’d order takeout while fresh vegetables would rot in the fridge-moldy tomatoes, wilted cabbage, the works. That’s when fermentation, an ancient way to preserve produce, sparked the idea for tomato kimchi. In Indian homes, leftover rice is a daily reality, so I fused the two traditions. The result?
A Kimchi Rice Cake!🍅

I'm going to be posting a dish per day
Stay tuned!

A few more from the archives for the last volume

Content creation for @praxis.arts was all about learning how to tighten workflows and keep things simple yet impactful, thanks a lot to Vritika for the opportunity!

Irya was a lovely one to stumble upon again while going through my old files.

SPOILED was one of the visual directions I worked on for the event (not the final one). Designed a cute slambook page layout for it. Loved the event and how everything came together. Big thanks to @pracheemashru and her sweetest team for the beautiful concept and for pulling it all together.

Grateful for these explorations and the different spaces they let me work in

Last weekend with @praxis.arts , we dived deeper into the creative process of dhoop, unpacked everything from design to editorial, from plate to page and back to the plate, and talked about future plans, food trends and the what makes it to the magazines and how.

Big kudos to @shamika_desai and @vritika23 for facilitating and making space for publications, magazines and all wild ideas. And most importantly, a big thanks to @_thecleanplate who created delectable dishes inspired by the third issue of dhoop. I could literally taste the stories. More on that sooon!
