>> LAMBIC WORKSHOP <<
> Steken met Uli & Raf Reloaded <
> 5. & 6. Februar 2026 <

Last weekend I cooked up some brisket pastrami and regular briskets for Soefke’s 40th birthday. 🐐🐐
Together with Evert en Yves we assembled the pastrami sandwiches consisting of: a rye bun, 12 hour smoked pastrami, melted Swiss, pickled & fermented vegetables and a russian dressing. 🍔

Pretty happy with the result and i had a blast making it.

Raf is a time traveling wizard from 2035.

This was a fun side by side! Went into this expecting to prefer the 2017, since 2018 went into the same Levenswater barrel that 2017 was previously in. 2018 was also blended with Chardonnay barrel lambic, and to me was more rounded, but was definitely a split decision at the table on preference.

Shoutout the homies @doughjooe and @neumdaddy for sharing their bounty from last years BFNA auction this past weekend after Oysters and Gueuze! This was such a special blend, and even more special to share with some of my favorite people. The Chardonnay Barrels shined 😍

Peaches, Cherries, Muscat and Riesling, what else do you need in life? Sooo stoked to see Raf is getting some more liquid in bottles. The world needs more blends like this.

I definitely need to visit the warehouse again while he smokes cigarettes next to something super flammable….

Great time over the last week in Germany and Belgium catching up with old friends and seeing some beautiful places. It’s asparagus season in Germany which is the most wonderful time of the year.
