Lemongrass Chicken Vermicelli Bowls - recipe below ⬇️

Fresh, crunchy and full of flavour, these Vietnamese-inspired vermicelli bowls are a delicious meal that feels light but satisfying.

The chicken is marinated in fresh lemongrass, garlic, lime and soy, then pan-fried until golden and juicy. Served over vermicelli noodles with plenty of crunchy vegetables, fresh herbs and a generous drizzle of nuoc cham dressing, every bite is full of freshness and flavour.

• 4 chicken fillets, cut lengthways into 8 pieces
• 1 tbsp lime juice
• ½ tbsp fish sauce
• 1½ tbsp soy sauce
• 1 tbsp brown sugar
• 1½ tbsp vegetable oil
• 2 garlic cloves, crushed
• 1 tbsp fresh lemongrass, finely grated

• Vermicelli noodles, prepared according to packet instructions
• Shredded lettuce
• Shredded wombok (Chinese cabbage)
• Carrot, julienned
• Cucumber, julienned
• Red cabbage, finely shredded
• Fresh red chilli, finely sliced
• Fresh Vietnamese mint
• Fresh coriander
• Lime wedges, to serve
• Nuoc cham (Vietnamese dipping sauce), for drizzling

Marinate the chicken.
In a bowl, combine the lime juice, fish sauce, soy sauce, brown sugar, vegetable oil, garlic and freshly grated lemongrass. Add the chicken and toss well to coat. Cover and refrigerate for at least 30 minutes, or longer if you have time.

Cook the chicken.
Heat a large frying pan over medium-high heat. Cook the chicken in batches for a few minutes on each side until golden, cooked through and beautifully caramelised. Set aside to rest.

Prepare the noodles.
Cook the vermicelli noodles according to the packet instructions. Drain, rinse under cold water if directed by the packet, and set aside.

Build your bowls.
Divide the vermicelli noodles between serving bowls. Arrange the shredded lettuce, wombok, carrot, cucumber and red cabbage around the noodles. Add the sliced lemongrass chicken, fresh chilli, Vietnamese mint and coriander.

Dress and serve.
Drizzle generously with nuoc cham dressing and finish with fresh lime wedges. Toss everything together just before eating.

Enjoy!
Lisa
