The soft texture of the mousse and berry jelly 🥰 makes a perfect combination 🤌 with the crunchy cookie in our delicious Raspberry Mousse Cake✨🌲 dessert.

Ingredients:
6.3oz Flour
2.6oz Raspberry
20.4oz Sugar
3.5oz Butter
1 Egg
2 tbsp Baking powder
7oz Whipping cream
5.2oz Cream cheese
3.5oz Blueberries
1.6oz Grenetine powder
1 Yellow lemon
2.6oz Blackberries
200ml Milk
3.5oz blackberries
50ml Water
50ml raspberry liqueur
20 Mint leaves
3tbsp Powdered sugar

Directions:
Cream the butter with 3.2oz of sugar, adding the yolk of 1 egg until obtaining a fluffy mixture. Separately, whip the egg white until stiff with 3.2oz of sugar, adding it in an enveloping way until integrating. Then add 6.3oz of flour and 2 tbsp of baking powder in the form of rain; integrate in an enveloping way and pour into a baking pan for 50 min at 190°C.

Once the sponge cake is baked and cooled, we will mount on top of it the mixture of 7oz whipping cream and 5.2oz cream cheese at room temperature, pureed blueberry, and the juice of 1 lemon, adding 1oz grenetine powder in the microwave for 30 seconds well incorporated to refrigerate the mousse.

On the other hand, blend 2.6oz blackberries, 200ml of milk, and 3.5oz sugar and then bring to a boil. Separately, melt 0.6oz of grenetine powder to integrate it into our pot removed from the fire until it reaches room temperature. Once gelled at this point, pour over our mousse container and take it to the refrigerator to finish gelling.

Once firm, unmold the cake and cut it into rectangles. Serve the cake on a plate, decorate it with berries around it and mint leaves, finish by sprinkling powdered sugar over the cake, and optionally cover it with strawberry sauce threads.

Strawberry sauce:
Blend 2.6oz blackberries, 3.5oz sugar, and 50ml of water and bring to a boil, until it thickens, add 50ml of raspberry liqueur, boil for 5 more minutes and turn off.
