Incredibly excited to be back in LA next week for the @rusticcanyon 20th Anniversary dinner series finale(s) on October 26 & 27. I’ll be cooking some of my favorite memories, Santa Monica-fying a certain dish from @the_catbirdseat, and collaborating with boss-man @eiaeeo and bestie @erikaachan on a few new bites.

Really looking forward to seeing some familiar faces. Several time slots still available via @resy

Vermillion, mole amarillo, porcini, sunchoke

The mole is made using tetsukabuto squash, angel’s hoja santa, nothstine masa miso i made in 2022, and a dashi infused with the squash seeds and roasted skins. We pickled the leftover porcinis from the @evanfunke collab (thank you chef) and are finishing the dish with one of my favorite things—sunchoke chips.
